I always thought sushi meant raw fish. If you deep fry it it becomes fried fish, I think I would like that better. They have them at a chinese buffet I go to haven't worked up the nerve to eat one. They look like food art.

Please be careful about frying "old" sushi! If you have kept it out.. for any time.. and left it out.. in room temperature.. you are asking for hurting yourself..

If you use fresh fish.. consider.. using a batter.. of rice flour.. with seasoning.. and club soda.. like a tempura batter.. make sure you keep the batter as ice cold as you can.. and deep fry it.. then you get the crispy texture..

Or use panko crumbs.. with an egg batter.. for a quick fry.. with seasonings.. but I like the preferred Tempura batter.. above..
