at a restaurant that catered to people with special diet needs. Such as diabetes,heart disese, obesity. All natural, organic ingredients. Regular foods but altered to still taste good but meet the diet requirements for us special people. I've been diabetic for 42 yrs. Do you think there's a market for it? Any recipes?

That's a tough one. Most restaurants already have a small choice for diabetics and for the heart-wise. I think a restaurant catering to only the healthy will have a rough go of it..........but then again, it may work in California. Never know. If you are really serious about opening one, I would start a big Internet search regarding such a thing and maybe put a Blog up too and see what kind of feedback you get.
We are a society that wants everything...........from taste to looks. Heck, Emril rarely cooks anything healthy.

Wow that would be interesting. I agree with the above post - do some research and it may or may not work in your area. I actually rarely eat out because I know how unhealthy even the healthy choices on menus can be. I don't have any major health issues that cause me to eat that way, I just prefer it. I do have to avoid corn syrup as much as possible. That stuff is evil LOL. It is in a ton of processed foods too. No diabetes (been checked), it just makes me very nauseous and seems to possibly be a migraine trigger for me.
As far as recipes go...I add lots of herbs and spices when I cut out fat and sugars. I also like spicier foods and don't miss fat or sugars at all in those. I make a great italian dressing that everyone always wants. I cut the fat way down by just adding a small fraction of the olive oil it asks for, actually cut it out completely sometimes, and add extra balsamic vinegar (watch sugar in that) and herbs.
You should check out vegetarian and vegan recipes. Lots of those are naturally low fat, natural sugar, low on the glycemic scale foods - do your research on them though because some can sneak in some higher calories or sugars. It's easy to substitute a lean meat or fish with a lot of the recipes too.

Could be a market for it in a large city. I'd probably eat there. Especially if they were conscious about food allergies. I don't know how many times I've had to explain that if you cook my food on the same grill or in the same pan you cooked mushrooms without thoroughly scrubbing it I will have an allergic reaction. That or explaining to a waiter or server that if there's onions on my food they can't just scrape them off because I could stop breathing and die!
As far as the healthy goes, if it's all natural and organic then I'm all for it.
