CROCK POT MAC & CHEESE
16 oz box of macaroni
1 stick of margarine (can use a little less)
2 cans evaporated milk (12 oz can)
approximately 3 cups milk
24 oz (or less) grated sharp cheese
1 T. minced onion (optional)
1 T. oil
1 tsp. salt
pepper to taste
1 or 2 finely grated carrots (optional)
Put all the ingredients into the slow cooker. Cook on low for 3-4 hours until soft.
Note: To cut down on fat, use nonfat evaporated milk, nonfat skim milk, less than 1 stick margarine, and less than 24 oz of cheese. You may also add a grated carrot or two for additional nutrition.
(Hope I can add a few recipes)

I like to take 2 pot roasts and cook them together, with just a little seasoning.
When done take 1 out and add veggies and extra seasons to the one in pot and continue to cook until done.
The second I usually will save for sliced roast beef or sandwiches.
Or put it back into the crockpot with BBQ sauce and cook on low until falling apart. Then you have BBQ beef for sandwiches. (this is great on a cookout with elec)..

Awesome recipe, Bama. I made it recently and decided to add a shot of creme de Menthe and creme de cocoa in it to give it a "grasshopper pie" flavor.

This is a real easy crock pot recipe for cube steak. Most cube steak gets overcooked especially when it is fried in a pan or cooked in an oven. My kids can even cook it; and, they do.
Layer half of one sliced onion (onion ring cuts) on the bottom of your crock pot.
Layer 3 cube steaks over them
Layer the rest of the onion on top of the 3 cube steaks.
Layer the final 3 cube steaks over the other steaks and onion.
Take 2 cans of either Cream of Mushroom or Cream of Celery soup and smear over the top
Add one package of Lipton Onion Soup mix over the soup.
Set it on low for 6-8 hours. You can add fresh sliced mushrooms about halfway through the cooking process. It really makes an easy meal with mashed potatoes.
Enjoy

Beef Brisket.......Small or large crock pot what ever size you need for the aount of meat you intend to fix....(I have just plain roast this way)
Mix equal amounts of soy sauce and wochester sauce add a dash or two of liquid smoke.....pour over the meat and cook on low for about 8 hours......about 6 hours into the time, take out and slice, laying the slices right back into the sauce.....I fix it like a drip beef sandwich if I have leftovers for the 2nd meal.....

these all sound really good.
one of the things I do with a roast is brown it first then put it in the crockpot at night. I let it slow cook from about 9 pm to dinnertime the next day. I add the other ingredients the next morning (like carrots, potatoes, turnips, parsnips, etc.) Amazing how tender the meat is.

Mommatoad, sounds real good.
.
I like to take chicken wings and drumettes to my crock pot. I add 1 bottle of Del Monte chili sauce and 1 can of crushed pineapple. About 4-5 hours should do it.

I always put all of the large vegeatables; the carrots, potatoes, etc.; under the meat and then don't add water. There is enough water in them to keep the meat moist.
They are done when the roast is done. I put chopped onions on top and around the sides of the meat.

Just found this thread and just saw this on TV today at home on my lunch hour on a show called "Almost Homemade Cooking." It showed how to make fajitas in the slow cooker:
1 green pepper (I only saw one of each, could've been more though)
1 red pepper
1 onion
1 to 1-1/2 lbs. beef round
package of fajita spices (or taco)
1/2 cup beer
Sliced the peppers and onions and put in the slow cooker (crock pot), slice the meat into 1/4-1/2 inch slices and put over the veggies, sprinkled all that with the fajita spice package, poured the beer on top of that, and put it on low heat.
At the end showed them wrapped up into fajitas with a rice on the side, but I couldn't watch the ending but LOVE this idea. She said the meat is a tough one but NOT by the time it's done and you could use skirt steak if you prefer (but I don't like skirt steak).
EASY PEASY!

I love my crock pot. It allows me to cook dinner even on days when I'm having epileptic seizures. It's a god-send.
I've done mostly simple things in it. One thing I particularly liked was a beef roast I made up for tacos.
5lbs beef roast
salt, pepper, chili powder, granulated garlic and granulated onion to taste.
I cook it in about a half cup of red wine and the rest of the liquid is just water.
Makes some great taco meat.

I make anything from chicken, chili, roasts, scalloped potatoes and soups in mine. Remember that a crockpot is a great place to do your stuffing and sweet potatoes in for the T-giving and Christmas holidays, if you run out of room in the oven. Great place to keep gravy warm, make a big batch of hot chocolate in it or apple cider.

Spicy Beans with Coconut Milk
1 sweet onion, chopped
2 garlic cloves, minced
1 to 2 tablespoons red curry paste
1 pound beans, rinsed and drained (and soaked overnight if they're the kind that need it)
1 (14.5-ounce) can diced tomatoes, undrained
1 (13.5-ounce) can lite coconut milk
1 teaspoon grated lime rind
2 to 3 tablespoons fresh lime juice
2 tablespoons sugar
1 to 1 1/2 teaspoons salt
4 cups hot cooked basmati, long-grain, or jasmine rice (I like brown rice for the added fiber & nutty flavor)
To this base recipe, I've added mushrooms, green & red onions – then topped the finished product with okra. When making the rice, I try to use some home made stock, a clove of garlic & a bay leaf.
Make the rice separate, everything else goes into a slow cooker – start & go. Put the beans on the bottom, so they're covered by liquid to re-hydrate / cook in. When using mushrooms, I like to only put them in for the last 30 min or so of cooking, so they retain their texture (if you like the texture of the bell peppers, you can do the same for them). This is also when I like to add the seasonings (slow cooking can destroy some of the flavor).

dunrich2,
If you have an opportunity, I highly recommend watching any & all "Good Eats" episodes on baking that you can. He not only demonstrates a recipe, he explains why he does the steps he does... so you fully understand the process & basic (very basic) chemistry behind it.

I think they are all pretty good. I've burned up a couple over the years but I use them alot. Bigger is better I think.

I have a cheap one and it works great, so yeah, just about any of them would probably work. Yes, I agree bigger is better. The one I have was a gift, but I'm looking into buying a bigger one. A removable inner crock is a must, really, unless you don't mind cleaning it the hard way.

I have three crock pots - all different in size and I love
all of them. I have recently discovered crock pot cooking and
am addicted. I started out with a small pot because it is just
me and now have a five quart and a seven quart to make my sauce in.
here is a recipe -
Pulled pork
Pork shoulder about three pounds ( more or less what you need.)
Bottle of rootbeer - pour rootbeer over pork covering pork roast.
Cook on low for 5-7 hours.
When done discard rootbeer. Shred pork with fork and put back in
Crockpot. Pour your favorite barbeque sauce in and let cook on low
for another hour.
Put in buns and enjoy.
You can also use coke if you like but the rootbeer adds a sweetness
that is wonderful.

That way whenever you take the time to cook something good you can put some in the freezer.

Save the insert porcelain pot it makes a great baked bean pot and stays warm longer for gatherings. The lid fits too. I have several different sizes one I use for my sourdough.
