My Mom is a great cook! And would always make fresh Cranberry Relish enough for a large family, every Thanksgiving.
But now that it's just me and her, I didn't want to go to all the trouble for something you only eat a spoonful of, with your Thanksgiving meal.
I came up with this easy solution, for a more portion controlled recipe.
Empty a small 4 oz. can of Ocean Spray Cranberry Relish/Jelly in a bowl. Take a fork and mash it up, and stir it into a goo.
Zest a sweet orange. It's ok if you get a little of the white pith when you zest it, because the sweetness of the sauce, will offset the bitterness of the pith. Squeeze the juice of the orange into the sauce, adding the Orange Zest, too. Stir it all together, serve chilled. This will make enough for 2 people.
I was actually more inclined to want to eat this relish, and ate it slowly over the next few days. It's really tastey!
It's even better than what my Mom made, and she agreed with that.
