I was just cooking a bite to eat and considered making an old favorite. Dutch Babies we call them. I wanted to share the recipe and hope that others will share their favorites!


Dutch Babies Oven Temp 425

Batter:
1 1/2 C Flour
1 1/2 C Milk
6 Eggs

Mix ingrediants and when oven is heated put one cube butter in 9x12 baking pan and heat in oven just till butter melts. Take from oven and pour batter into pan over butter. Place back in oven and bake until sides rise and edges turn slightly brown. Remove and cool just a couple minutes. Cut into 6 and serve.

Toppings...sprinkle powdered sugar and lemon juice if you like tart or raspberry jam if you like sweet!


They should look like this when done...Very rich but yummy!

Open box
put onto a microwave safe plate
microwave for 3 minutes, remove plastic, stir and microwave for 2 more minutes

My favorite receipe is making Homemade Almond Roca

1 cup real butter
1 cup sugar
1 6oz package semi sweet chocolate chips
chopped walnuts

Grease your pan with butter. I use the foil cookie sheets

Combine butter and sugar in a heavy pan, cook over medium heat, stirring constantly until candy thermoter reaches 310*F. At this point candy should be carmel color.

Quickly pour the candy into a greased pan and spread evenly. Cool until hardened. Melt the chocolate chips over the top of a double broiler. Spread over the candy, then sprinkle with chopped walnuts. After the candy is hard, break apart into pieces. Store in an air tight container.

This will make 1 pound of candy.

I always make this at Christmas time.

1 large can whole cranberry sauce
1 large Catalina dressing
1 package of dried onion soup mix

blend together pour over yer chicken
bake for an hour at 400

make some of your favorite rice as a bed to put this scrumptious culinary creation on.

or microwave some cup o noodles (chicken of course)

Liver and Onions (no wrinkling noses!)

Use Calves liver..most tender, best texture and not so strong.



Rinse liver and coat in mixture of flour, johnnys, garlic salt and pepper.
Cook each side just till just browned about 2min..may not seem fully cooked but thats OK..do not over cook. Remove and set aside.
In clean pan fry bacon and remove. Use bacon greese to grill onions.

Make a brown gravy. Package or homemade.

When onions are done add liver and crumbled bacon back to pan. Cover with Brown gravey and simmer for about 20 minutes.

Liver lovers enjoy!!

Same thing only use fresh venison liver. Skin the membrane off the liver and soak it over night in salt water. There is no liver better than good venison liver.

Cranberry Jello

2 packages cranberry jello
whole cranberry sauce
crushed pineapple
Sprite, 7-up or Sierra Mist
Cranberry juice

I heat up the cranberry juice (in place of the water) add the jello,STIR, then add 1 can of whole cranberry sauce and 1 can crushed pineapple (with the juice) STIR, then add some Sprite or whatever kind of lemon-lime soda. I usually will add 1/2 of what the receipe calls for on the package.

It is yummy, I found the recipe online, and now my family wants it for every Holiday.

Yes, Rocky Mountain oysters.

I have ate them a number of ways. The way I prefer them is sautade in butter with minced onion and garlic. You want to go to a branding where they are cutting young calves. Get the small ones. About the size of the end of my thumb. I have eaten the big ones but I prefer the little ones. Cut the cord off the end and take off the membrane and cook away. They can be breaded and deep fried. I have had them with scrambled eggs for breakfast. My least favorite way is roasted on a stick over the branding fire. Done that in the middle of a long day when the stomach was growling.

I'll skip oysters of any kind.

But here is somthing I like

Cheese Potatoes:

Ingrediants:
Red potatoes (large not baby reds)
Grated Tillimook Chedder Cheese (or any chedder is fine)
Whipping Creem
Garlic Salt
Pepper

Boil enough Red potatoes to fill your desired caserole dish once grated. Cook just till soft but not too soft, must be firm enough to cool slightly and grate.

Grate potatoes and spread in baking dish (I use 9x12) to make first of three layers.
Sprinkle garlic salt and pepper evenly over layer then add layer of grated cheese. Repeat for three layers.

Pour Whipping Cream evenly over top. 16oz for 9x12 but if using smaller pan use enough that the liguid has coated the bottom and evenly wetted the dish.

Bake for about 25min in a 350 oven. Serve hot.

regular oysters!!!! mmmmmmm

Go down to the Willapa and get some fresh oysters. (I don't eat puget Sound oysters)

Just put them on the grill. When the shell pops open eat them right off the half shell. Makes my mouth water thinking about it. They say you should only eat oysters in a month with an R in the spelling. We are to September. I can feel a trip to Goose Point oysters coming on.

Sorry, beg to differ. The best liver I ever had was from the Bronze Turkeys that I raised. Normally I don't like liver, but it was sooooo good. Mild flavor and a nice texture. Maybe because it was really fresh? Not much of it ended up in the stuffing.

My favorite lazy baking recipe: Dump Cake

1 can cherry pie filling
1 can crushed pineapple w/ juice
dump both in 9x13 pan
1 yellow cake mix
dump on top of fruit, covering evenly
1 stick butter or margerine
cut in pieces and dot over top of cake mix
bake 350 for 1 hour

This is the basic recipe. You can use any fruit, fresh or canned, and any cake mix. My mom likes to cut the butter into the cake mix so that it is evenly distributed, but it isn't really necessary and that would use more dishes. Remember that this is a lazy recipe.One of my favorite combos is apples and spice cake. Whatever fruit is in abundance and then a cake mix that compliments. Use your imagination!

I learned how to make this recipe in Girl Scouts when I was a teenager. Me and my boys tend to use this recipe from time to time when we go camping. Our favorite is canned cherries and either yellow or chocolate cake mix.

A great recipe for Cucumber Salad........

3 cucumbers - peeled and sliced thinly
1 onion - peeled and sliced thinly
2 tsp of fresh dill - chopped up nice and small
1/2 to 1 tsp of fresh ground pepper - your choice on the amount you use
1 cup white vinegar
3/4 cup sugar
1/2 cup water

Boil the vinegar, sugar and water together. Once boiling, let it boil for one minute. Then pour over the remaining ingredients in a big bowl. It will be watery. Stir, cover and put in the fridge for at least an hour or two before serving. When you are ready to serve.....stir it again and taste to see if you need to add any more pepper.

Of course..........you can always add chopped up tomatoes, olives, zucchini, or anything else you like. Just depends on what flavors you like. Some people use Italian dressing instead of the vinegar mixture. Again, depends on your choice of flavoring.


I have a variety of recipes in my arsenal that I make every year. Some contain a secret ingredient so I will not share that recipe (my fudge) and some I will share.


Potato Candy

1 medium potato - cooked through and peeled
1 bag of powdered sugar
1 jar of peanut butter

After cooking the potato through and peeling it......mash it in a bowl with a fork. Once fully mashed, let it cool for a few minutes. Then add as much powdered sugar as you want to get a nice mixture that you can spread on a piece of waxed paper. Spread it thinly as wide and high as you can. Then spread peanut butter on it and then roll up the whole thing. Wrap in the wax paper and refrigerate for at least an hour before cutting into small pieces and serving. You can also provide some dipping chocolate on the side when you serve this very sweet but addicting candy. It is a favorite in my family.

Here is a low cal healthy snack that tastes like its not.

Veggie Bars.

Two tubes of cresent rolls.
8oz Philly Cream Cheese
1cup light mayo
1/2 package powdered Ranch Dressing mix
Brocolli, cauliflower, radishes and cheese.

Spread the cresent roll dough onto a cookie sheet sprayed with Pam. Spread it fairly thin because it will rise a little. This is your crust. Bake at 350 util lightly brown. Remove and cool.

Mix cream cheese, mayo and dressing mix in a bowl. Spread over cresent roll crust.

Chop veggies and grate the cheese. Chop fine and make enough to cover crust.
Sprinkle veggies over cream cheese covered crust and top with grated cheese.
Cut into squares and enjoy!

Campers from the Rife Lake campout have had these.
