I'm having Christmas dinner with my southern family again... my family away from family. (just as nuts, only booze involved...)

My life prior to living in the south consisted of being asked to bring the chips and dip. I got by with that for 44 years!!

That just doesn't cut it down here. In the four years I've lived here, I've learned to make...

1) dump cake and.... well... that's about it.

But I no longer get away with chips and dip!!!

This year... I've been asked to bring the mashed potatoes!!!

I can DO it!!

What about you?? What's for dinner??


PS: Anybody got any good recipes for mashed potatoes?? I'm thinking along the lines of creamy garlic or maybe even something with cheese in it...

I do hot banana pudding, potato salad, choc pie w/ real meringue....mmmm. I only get these thong on holidays. This yr I'm making a fresh coconut cream cake. My girl loves this. Some eggnog with a 'little extra warmth in it' for Mom.

i'm cooking ham


i take a can of pineapple juice the 46 fl oz or two

and cover the ham with it

i've found it works great with a frozen ham

a frozen one i soak two days a room temp

thawed smoked ham no longer then 14 hours

then i bring it to a boil

and remove it to a pan deep enough to almost cover it

i continue to simmer remaining juices

and add dried fruits

i find the pectin in pears help to thinkin the glaze

Try this glaze for a turkey :


one cup orange juice (no pulp)

one can cranberry sauce (smooth or whole berry)

one cup orange marmelaid


heat it until it is all smooth and mixed together. Set it aside and then bast turkey with it one hour before the turkey is done.

Parsnips and turnips, too. They'll add a lot of nutrition and a hint of sweetness.

Mash with a bit of half and half, or heavy cream if you want really rich, along with butter, salt and pepper.

That's the simplest way. Although you could use cream cheese, too, or roast garlic and mash the cloves into the mashed potatoes.

When I invite, I don't usually ask for the guests to bring something.

It is good forum to take a gift for the hostess....flowers, wine, a gift basket with personal goodies {soaps/sponages}, candles. chocolates etc.

What about boiling a couple of cloves with the potatoes? I think I've tried that in the past but wasn't happy with the effect... maybe didn't have enough?!

Yes one whole orange sliced inside the cavity. And they put lecks inside with the orange but i perfer stuffing inside LOL

lol... alright... seeing ya's twisted my arm!!!


Dump one can of pineapple (crushed, not the small can, not sure what size), spread evenly

Dump one can of preferred pie filling (prefer cherry, roommate likes blueberry, but omg if I could find some blackberry!!), spread evenly

Dump one box of yellow cake mix, spread evenly (yes, dry, right out of the box)

Cut one stick of butter into about 16 pats and place evenly over top of cake mix



Bake for one hour at 425



It's delicious!!!

Edited to add: I don't know what size cake pan but... not the small one... not the square one... the rectangle one!!

Binder:
To make great mashed potatoes, boil them in chicken stock instead of water. Drain, add a little butter and lots of sour cream, then mash. Add a little salt if you like, but the chicken stock usually makes them salty enough.

Easy cookies: One box of any flavor cake mix, one-half cup of oil, 2 eggs. Mix and add flavored chips or nuts. Roll in small balls and bake for 9 minutes at 350.

try roating your garlic for about 30 min with a bit of olive oil 300 oven until soft,It will mash nicely with your potatoes.
You cant go wrong with "Taste Of Home" magazine if you can read you can cook.Great ideas to.People will rave. Just smile and say it was nothing really.
