Because why waste time with a person if they are not a good lay. And I am a female and I do the same thing we can kick it for awhile then I just want to have sex to see if the other person is fun or not. First ladies, when you ask "why do men" want or do anything, the implication is that you refer to all men. So I can see why you might have "men" problems. But to answer the question, I do want to get to know a lady before we have sex. But the sex is part of getting to know her at some point.
