How about the rattlesnake hunt up by Frederickburg....Last year these got more than two tons meaning about 4000lbs. of rattlsnake meat.....

All the Dallas stuff if fun, too. Great zoo, good art museum, the plaza where Kennedy was shot and the museum, the Holocost museum (way coo-way seriously sad), Super shopping and even some shows if you plan it right.
Fort Worth is also cool. The science museum is great (down by the stock yards). There are things going on in the stock yards most of the time - just google them.
How about renting a houseboat on Lake Texoma?
Just some ideas.
