PORK MINNESOTAN

Center Cut Pork Loin approximately 3 pounds. Fresh Rosemary. Chopped fresh garlic
salt and pepper and granulated onion.

Chop Rosemary finely. Rub Pork Loin with salt, pepper, and granulated onion. Spread garlic along loin side. Cover liberally with chopped rosemary. Place in shallow baking dish or pan, place in 300 degree oven for 45 minutes or until meat thermometer reads 145 degrees.

SAUCE; 1 qt. Cranberry juice 1 Cup Port Wine Corn starch

Reduce in saucepan by half cranberry juice, add port wine, simmer 10 minutes to allow alcohol to burn off. Thicken with 3 Tbsp. Corn Starch and 3 Tbsps. Water, mixed together first to make paste, add to cranberry/port mixture, thicken juice until slightly jellied.

Slice roast pork about 1/4 inch thick, place overlapping each slice on dinner plate. Drizzle sauce over pork.

Excellent with Sweet Potato souffle, Roasted Root Veggies, or Wild Rice

Vegetable choices: Yellow Squash, Zucchini, Red Pepper, and Snow Peas Medley or Baked Acorn or Butternut Squash.....I won an award for this dish at an ACF cooking contest in 1986

RASPBERRY PORK FRANGELICO

Ingredients:

Center Cut Pork Loin 3# Fresh raspberries Frangelico liqueur (Hazelnut)
Flour cranberry juice egg wash

Slice fresh pork into small diameter medallions, approximately 1/4 inch thick, slightly pound flat with side of large knife. Take 2 eggs and 1/4 cup water to make egg wash, mix well. Dip pork medallions into egg wash mixture and then into flour. Dust off any clinging flour. Set aside until next step.

Take frying or saute pan, place over medium heat until water droplet dances on surface. Add small amount of cooking oil. Place floured pork portions in pan. Cook on each side for 4 minutes each. Add cranberry juice slowly until sauce is started in pan. Add raspberries at this point. Stir in quickly frangelico and reduce into a sauce that take on a slight pinkish hue. Place pork medallions on plate, pour sauce over pork add more raspberries for garnish.

Goes very well with roasted yukon gold potatoes, or garlic smashed, or wild rice.
Grilled asparagus or baked acorn or butternut squash is excellent veggie choice.

the next day after you cook the pork loin....shred the pork and put it in apan with Jack daniels barbecue sauce and a little terriaki sauce/ heat until hot. Spoon liberally on a hamburger bun

Frangelico is a hazelnut liquer and yes the temperature is 300 degrees that way your poek stays moist and not dried out.

Well if you are temping the meat for doneness having the oven at 350 won't make a difference except it will give a nice color and texture to the outside. Now using a convection oven I would go with the 300 degree temp.

The time of 45 minutes in his original post is about right. If you really wanna get nuts go buy a remote probe thermomteter. you can insert in the meat and it has a wire that comes out of the oven to a digital thermometer/timer. You can set it to have an alarm go off set to time or a specific temperature.
