1 and 1/2 cups dried apricots,3/4 cup dry white wine,4 lbs. rabbit pieces,plain flour,1/2 cup olive oil,2 large onions sliced,2 cloves of garlic crushed,1 tblsp. flour extra,2 bay leaves,2 celery stalks chopped,2 1/2 cups chicken stock,2 tsp. honey,2 tsp. chopped thyme, 2tsp. chopped rosemary, 2 tsp. corlander seeds crushed, 1 tsp. brown vinegar, Cracked wheat,2 tblsp.olive oil,2 cups water,1 cup cracked wheat,1/2 cup black olices sliced,2 tblsp. parsley. (1) combine apricots with wine in a bowl let stand 1 hour (2)preheat oven to 350 (3)toss rabbit in flour, shake away excess flour, heat oil in frying pan, cook rabbit in batches until brown all over. transfer rabbit into ovenproof dish (12 cup capacity).add onions and garlic to same frying pan, cook, stiring until onions are soft stir in extra flour until grainy. (4) gradually stir in bay leaves ,celery,stock,undrained apricots,honey,thyme,rosemary,coriander, and vinegar, bring to boil,pour mixture over rabbit, stir well. (5)bake covered in 350 oven for 2 hours or until rabbit is tender. season with salt and pepper, Cracked Wheat combine oil and water in sauce pan bring to boil, add wheat, simmer coverd over low heat 15 minutes. remove from heat ,stand covered for 10 minutes, add olives and parsley season with salt and pepper. I havent tried this one yet but its on my list of things to do it is a greek recipe called "kouneli me verikoko ke pligouri"
