Buy some good bacon and put it in a cast iron skillet, not too crowded, and turn on med/low heat. Turn bacon
with fork. When is seconds away from perfect, take it out and put it on paper towel to drain. That' s it. They
probably have a grill for one thing, and you happen to like the taste of the bacon. If there is a good market
nearby, try the various kinds of bacon, just buy a small amount. Some people like it thick, peppered, thin,
crispy, limp, etc. Once you find it, you can make it at home.

You got me thinking so I did a search for perfect bacon and came up with this.
How to Make Perfect Bacon
Put it in a cold oven, set it for 400º, and come back 20 minutes later.
I'm going to try it. Pan fried bacon is just fine for breakfast but it doesn't always turn out good enough to work well in salads, sandwiches, mac and cheese, etc.

Thanks! Heh, I am so going to get some now.
I tried the method last night. Three pieces were perfect and three pieces were too well done but the pan I used warps and doesn't stay flat in the oven. I don't remember for sure but I think the pieces that stayed in the grease were the ones that turned out perfect.
In any case, I'm going to try it again this weekend with a pan that stays flat. Maybe it's time for another trip to the fancy kitchenware shop. That's just what I need, more pans in the kitchen.

Swiss Cake Rolls or Apples. Not necessarily at the same time... What do I do about it? I go to the store and buy apples and Swiss Cake Rolls. It doesn't happen often, but when it does, I listen to my body. There must be some great nutrients in Swiss Cake Rolls that nobody knows about LOL

Sushi.
Which sucks, as really awesome sushi is hard to find in landlocked Colorado- and it's expensive.
I miss Half Moon Bay. Awesome sushi, and a brewery and winery all within walking distance.

I drave beer-battered chicken and the shrimp. By the way, does anyone know how to doctor up cheap, canned beef stew in that the gravy isn't greasy and the meat doesn't taste gamey????

I crave "sardoni" which is a very small sea fish of the northern Adriatic sea, where I come from. They are similar to ocean smelts, but a firmer meat. Just fried without the head and guts. The leftovers are marinated with onions and red wine vinegar overnight and eaten cold the next day.
Also "dentice" and "orada", sorry, I don't know the English name for them, they are large sea fish, rare and very expensive in Italy, but a common every-day fish in Greece where they are called "fangria" and "zipuria".
Maybe they exists here too, if only I knew their English names.
