CORNBREAD SALAD

1 (1 oz.) pkg. Hidden Valley Ranch dry salad dressing mix
1 c. sour cream
1 c. mayonnaise
1 (9 inch) pan Tex-Mex cornbread, crumbled
2 (16 oz.) can pinto beans, drained
3 lg. tomatoes, chopped
1/2 c. chopped green pepper
1/2 c. chopped green onions
2 c. shredded cheddar cheese
10 slices bacon, cooked and crumbled
) cans Del Monte whole kernel golden sweet corn, drained

Combine salad dressing mix, sour cream, and mayonnaise. Set aside. Place half of crumbled cornbread in the bottom of a large serving bowl. Top with half of beans. In a medium bowl, combine tomatoes, pepper, and onions: layer half of this mixture over beans. Layer half of cheese, bacon, corn, and reserved salad dressing. Repeat layers using remaining ingredients. Garnish as desired. Cover and chill 2-3 hours before serving. Yields 10-12 servings.
NOTE: To prepare Tex-Mex cornbread, add 1 (4 ounce) can chopped green chilies and pinch of sage to your favorite cornbread recipe or a prepared mix that yields a 9 inch pan of cornbread

Cappuccino Cheesecake with Nut Crust

1 1/2 cups finely chopped nuts
1 cup plus 2 tablespoons granulated sugar, divided use
3 tablespoons butter or margarine, melted
1 tablespoon instant coffee powder
1/4 teaspoon ground cinnamon
1/4 cup boiling water
4 (8-ounce) packages cream cheese, softened
3 tablespoons all-purpose flour
4 large eggs
1 cup sour cream
Preheat oven to 325°F (160°C).
Combine nuts, butter and 2 tablespoons of the sugar; press onto the bottom of a 9-inch springform pan. Bake for 10 minutes. Set crust aside; raise oven temperature to 450°F.
Dissolve coffee powder and cinnamon in boiling water. Let sit until cool.
In a bowl, combine cream cheese, remaining 1 cup sugar and flour, mixing at medium speed with an electric mixer until well blended. Add eggs, one at a time, mixing well after each addition. Blend in sour cream.
Gradually add the cooled coffee mixture to the cream cheese mixture, mixing until well blended. Pour over the crust. Bake for 10 minutes.
Reduce oven temperature to 250°F (120ºC) and continue baking for 1 hour.
Loosen the cake from the rim of the pan; cool before removing from the pan. Refrigerate before serving.
Makes 12 servings.

NO BAKE COOKIES


Ingredients

* 2 cups white sugar
* 3 tablespoons unsweetened cocoa powder
* 1/2 cup margarine
* 1/2 cup milk
* 1 pinch salt
* 3 cups quick cooking oats
* 1/2 cup peanut butter
* 1 teaspoon vanilla extract

Cooking Instructions

In a saucepan bring sugar, cocoa, margarine, milk, and salt to a rapid boil for 1 minute.

Add quick cooking oats, peanut butter, and vanilla; mix well.

Working quickly, drop by teaspoonfuls onto waxed paper, and let cool.

something mom used to make that i loved:

slice a couple of bananas.
take equal parts of miracle whip, honey and peanut butter and mix well.
pour over the bananas.

it is a quick thing to do and kids normally love it too.

Peanut Butter Fudge

2 cups white sugar
3/4 cup brown sugar
1 teaspoon vanilla
1 stick butter or margarine

1 cup peanut butter

lightly grease 8X8 inch pan.

cook sugar, vanilla,butter, and milk in medium saucepan over low/medium heat until it reaches soft ball.

stir in peanut butter.

Quickly pour into pan then let cool completely.

You can add nuts if desired.

1 stick buutter (1/2 cup)


Melt 1 stick butter in a jelly roll pan.Spread in pan(in layers)- 1 cup of graham craker crums, 1 cup of shredded cocunnut,6oz od butterscotch chips and 6 oz. of chocolate chips,Drizzel one can sweet condensed milk on top.Add 1 cup of chopped walnuts on top. Bake at 350 degress for 30 minuts.Remove and let cool then cut into squares.

This is my mother's recipe for the finest rolls you will ever eat bar none.
Sometimes it takes a couple of tries before you get it quite right but it IS worth it.

Note: scalded milk was from before milk was always pasteurized. You don't need to do it now.
Flour should be Gold Medal. Sugar should be C&H. Shortening should be Crisco.
This does make a difference.

¾ cup scalded milk
¼ cup sugar
3 tablespoons shortening
1 teaspoon salt

¼ cup warm water
1 egg slightly beaten
1cake/package yeast

3-1/2 cups flour


Pour scalded milk over sugar, shortening, and salt
Let cool to lukewarm.

Soften yeast in water, add egg and mix well.
Add to milk mixture.

Add ½ of flour to yeast and beat well.
Add remaining flour and mix well.

Knead on lightly floured board until smooth and elastic.

Let rise for 1 hour or until doubled in size(covered bowl?)

Make rolls(butter inside folded roll)

Let rolls raise in pan as needed.

BAKER'S® ONE BOWL Banana Cream Cake


Recipe Rating:

Prep Time: 15 min
Total Time: 3 hr 15 min
Makes: 12 servings





35 NILLA Wafers, divided
1/4 cup BAKER'S ANGEL FLAKE Coconut, toasted
2 cups cold milk
2 pkg. (4-serving size each) JELL-O Vanilla Flavor Instant Pudding
2 cups thawed COOL WHIP Whipped Topping, divided
1 large banana, sliced
1/2 square BAKER'S Semi-Sweet Chocolate, shaved into curls (see Tip)



COVER bottom of 9-inch springform pan with wax paper. Stand 12 of the wafers vertically on end around edge of prepared pan. Coarsely crush remaining 23 wafers; sprinkle evenly onto bottom of pan. Top with coconut; set aside.
POUR milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Gently stir in 1 cup of the whipped topping. Spread half of the pudding mixture over coconut in crust; cover with layers of bananas and the remaining pudding mixture. Top with the remaining 1 cup whipped topping.
REFRIGERATE at least 3 hours or overnight. Top with chocolate curls just before serving. Store leftover dessert in refrigerator.

Substitute
Prepare as directed, using JELL-O White Chocolate Flavor Instant Pudding & Pie Filling.

Don't Have a Springform Pan
Use a 9-inch square pan lined with foil instead. Prepare as directed, reserving 12 of the wafers for garnish instead of standing on end around edge of pan. Cut dessert into 12 bars to serve. Garnish each bar with 1 of the reserved wafers just before serving.

this was the recipe i was trying to tell taz about last weekend. the only difference is besides the chocolate chips, mine also has a layer of butterscotch chips. we called them seven layer and i couldn't remember the butter.

Creamed SpinachPrep Time: 20 min Inactive Prep Time: 10 min Cook Time: 20 min Level:
Easy Serves:
4 servings 1 pound fresh organic spinach, soaked several times in salt water to remove grit, well-rinsed and dried in a salad spinner
4 ounces bacon (about 4 strips)
1/2 cup heavy cream
1/4 cup Parmesan
Salt and pepper
Freshly ground black pepper


Steam spinach until tender and set aside to cool in a colander placed over a bowl to catch any excess moisture. (Steaming preserves vitamins, so since it cooks quickly, be careful to avoid overcooking the spinach, which will negate that advantage.)
Cook bacon until crispy in a saute pan and remove to paper toweling to drain and cool. Pour most of the fat out of the pan and add the cream to the same pan over low heat, allowing to reduce by about one-third.

While the cream is reducing, finely chop the now cooled spinach, and return it briefly to the colander placed over a bowl. Cut the bacon strips into 1/4-inch pieces.

Whisk the Parmesan into the reduced cream, and season with pepper. Since the cheese will add saltiness, add salt only if needed. Fold the well-drained spinach and bacon into the sauce. Transfer to a serving dish.

Easy
Serves: 20 to 24 servings
Cake:
1 (1-pound) box graham crackers
2 (3 1/4-ounce) boxes instant French vanilla pudding
3 1/2 cups milk
1 (8-ounce) container frozen whipped topping, thawed
Frosting
1 1/2 cups confectioners' sugar
1/2 cup cocoa
3 tablespoons butter, softened
1/3 cup milk
2 teaspoons light corn syrup
2 teaspoons pure vanilla extract



Butter the bottom of a 13 by 9 by 2-inch pan. Line with whole graham crackers. In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.
For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

cr. of mushroom soup
cr. of chicken soup
can of cream style corn
6 or 8 ounces of cooked noodles or macaroni
american cheese

basically get hamb and noodles cooked then add soups and corn.
pour about 1/2 in baking dish and cover with cheese ( i like quite a bit of cheese)
then put rest of mixture over top.
bake at 350 for 1/2 hour

now the funny thing about this casserole...it does not taste good until the cheese is melted into it so if you taste before baking, don't be surprised if you think you will not like it.

Peanut Butter Cheese Fudge


36 squares 1/2 pound sliced easy-melt cheese (recommended: Velveeta)
1 cup (2 sticks) butter
1 cup creamy peanut butter
1 teaspoon vanilla extract
1 cup chopped nuts
2 (16-ounce) boxes confectioners' sugar


Lightly spray the bottom of a 9 by 2-inch square pan with nonstick cooking spray. In a saucepan over medium heat, melt cheese and butter together, then add peanut butter and stir until smooth. Remove from heat and add vanilla and nuts.
Empty confectioners' sugar into a large bowl and pour cheese mixture over sugar. Stir until completely mixed. Candy will be very stiff.

Using your hands, remove candy from the bowl and press evenly and firmly into the pan. Because of the amount of butter in this recipe, pat top of candy with a paper towel to remove excess oil. Place the pan in refrigerator until candy is firm.

To serve, cut into squares.

hamburger helper with cornbread topping....

fix hamburger helper two batches works well...

four packs of cornbread...mix as you like...

cook hamburger helper...put in two pans cause you gonna want more...pour cornbread overtop of it and bake for thirty minutes...when done, smoother butter over corn bread and eat while its hot...men love this trust me

lumpy pizza....
three cans of biscuits..pizza sauce, hamberger and cheese...pep if you like..

cook hamburger...line a baking pan with biscuts pour on pizza sauce, hamburger and anything else u like, top with cheese and bake for thirty minuts.....men like this also.

Gave Vera my old Mama's reciepe for coconut pie. MUCH simpler than hers. All that is necessary is baking the crust, mixing jello pudding mix with coconut, & dump in the shell. Course, my mama didn't use the jello mix, but wrote out the reciepe for me, when I began raising my daughter, by myself. She wrote me a whole book full of reciepes, without the many unnecessary steps, that do nothing! Yes, it worked! I raised my daughter from age 2 to 14 yrs, on my own. And, fattened myself up, so musta handled the cooking ok.

Molasses Popcorn Balls

3 quarts popped corn
1 ½ cups Brer Rabbit Molasses
¼ cup water
½ cup sugar
2 teaspoons cider vinegar
½ teaspoon salt
2 teaspoons vanilla extract
5 tablespoons vegetable shortening

Pick over popped corn, discarding all hard kernels. Combine molasses, sugar, water, vinegar and salt; cook slowly, stirring constantly, to 270 degrees F. (or when a small quantity dropped into cold water forms hard ball). Remove from heat; add vanilla extract and shortening, stirring only enough to mix. Pour over popped corn, stirring constantly. Grease hands; shape lightly and quickly into balls. [If you squeeze too hard, you will crush the popcorn and it won’t be as good.] Cool. Wrap in Waxed paper, twisting the ends of the paper around the top of the ball. Makes 28-30.

Touchdown Chili
With the help of McCormick® Chili Seasoning, this chili is so quick and easy to prepare that you won't miss any of the big game. Save half of the recipe (if you can) or start with a double batch to make our tempting Touchdown Chili Cups or Touchdown Chili Pizza.
Prep Time: 5 minutes
Cook Time: 20 minutes
Makes 5 (1-cup) servings.



Ingredients:
1 pound lean ground beef
1 cup chopped onion
1 package McCormick® Chili Seasoning Mix
OR McCormick® 30% Less Sodium Chili Seasoning Mix
1 can (15 ounces) kidney beans, drained
1 can (14 1/2 ounces) diced tomatoes, undrained
1 can (8 ounces) tomato sauce


Directions:
1. Cook ground beef and onion in large skillet on medium-high heat 5 minutes, stirring occasionally. Drain fat.
2. Stir in Seasoning Mix and remaining ingredients. Bring to boil. Reduce heat to low; cover and simmer 10 minutes, stirring occasionally.

3. Serve with shredded cheese, sour cream and chopped onion, if desired.
