Shouldn't say, I googled it the other day, I think it said 10-15 minutes per pound, that would be 1 hour per 4 lbs., or about 5-6 hours for 23 lbs. You might want to do some googling to be sure!

My turkey is 15 lbs. and I usually just go by how it looks and the pop-up thing, and I'm stuffing it which means it can cook a little longer.

Also, you should let the turkey rest about 30 minutes after you take it out, which I read lets the juices redistribute throughout and since it's still hot for a while it probably cooks a little more while resting.

It's important to make sure it's cooked thoroughly, the juices should be clear and not red.

Time is a great indicator, but if you have a probe thermometer, use it to make sure the temp in the thickest part of the breast reached 180*F 30 minute rest is good- that's just about the time it takes to take the foil off, remove stuffing to bowls, make some gravy with the pan drippings, and get it all to the table.

I cook my bird[12-16] at high heat,500F in a covered roasting pan with about a inch of water and cook for 2 hours before I go to bed.
I shut of the oven and leave it in oven over night.

In the morning, the bird is still warm and golden brown, moist,and smells great,and let cool. Later, just warm it up a little when ready to eat. A great time and cooking saver.
A real big bird [23 lb]add a extra hour.
