break out the cookie sheets

Spiced Apple-Raisin Cookies

3/4 cup butter .. softened
1-cup packed brown sugar
1-egg
1 teaspoon vanilla
1+1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1+1/2 cups oatmeal (uncooked)
1-cup finely chopped unpeeled apple
1/2 cup raisins
1/2 cup chopped nuts

In a large bowl, cream butter.
gradually add brown sugar.
beat till light and fluffy.
beat in egg and vanilla.
In small bowl, combine flour,
baking powder, baking soda,
salt and spices.
Gradually add flour mixture
to creamy mixture..blend well.
Stir in oats, apple, raisins and nuts.
Drop dough by rounded teaspoonfuls
2-inches apart on lightly greased
cookie sheets.
Preheat oven to 350 degrees.
Bake 10-12 minutes till lightly browned.
remove to wire racks to cool

I made some pumpkin doggie treats (they're just cookies) the "boys" had half the plate gone..before I could say "hey!! those are for the dogs"

it was with coconut oil butter substitute..pumkin good stuff..I did try one after that..they were good

taking a break while i wait on the eggs and butter to warm up
i have all the dry ingredients measured and waiting
just have to convince myself i am ready to do all the standing and mixing next!
i have the stuff for the cookie's in the recipe above and for a plain oatmeal cookie batch waiting

Easy Peasy Peanut Butter Cookies

Preheat oven 400

2 cups peanut butter

2 cups sugar

2 eggs

combine and mix well, roll into small balls.

Place on ungreased cookie sheet. mash with fork to create criss cross pattern.

Bake @ 400 for 12-16 minutes

Let cool.

Easy peasy. No flour!

gonna whip that up too when i start the actual baking!
as easy as that one is!

the other two batches are wrapped in parchment paper logs
about a foot long and around 4 inches in diameter
and they are resting in the fridge

dishes are all done and sitting drying in the rack and everything else is put away and waiting...

ouch

i'll let the logs firm up and slice em and throw em on my parchment paper lined cookie sheet
easy as uhm cookies? lol

don't forget to put the back of the fork into the sugar and then smash the crosses!!!

I am an insomniac too ..
I only get about two hours of actual sleep
out of every 24 .. crapola
someone knock me in the head with a skillet
I let the keyboard rest for awhile
just got on here for a minute ..

here's something a little different
something I might try .. after future groceries


~~ Peanut Butter Rice Snacks ~~

1-cup light corn syrup
1/2 cup granulated sugar
1/2 packed brown sugar
1-cup crunchy peanut butter
6-cups Rice Chex cereal

Line 9x9-inch pan with wax paper.
Combine corn syrup and sugars in saucepan.
Cook over medium heat Just until mixture
comes to a boil, stirring frequently.
Remove from heat. Stir in peanut butter
until well combined. Gradually add cereal,
stirring until all pieces are coated.
Turn onto prepared pan.
Refrigerate 15-minutes or until firm.
Cut into squares .. Store covered.

ENJOY

YOU ALL DO THE COOKING .. I'LL WATCH

AND GAIN WEIGHT ON MY BREAD AND WATER
.. WITHOUT THE BREAD

here is an awesome recipe ..
it and a tin of said cookies
was given to me by a dear sweet
neighbor when I lived in Boise
She passed away 6-years ago
I have made these myself for gifts

~~~

Sour Cream Cookies

2-eggs
2-cups sugar
1-cup butter
2-teaspoons vanilla
4-cups flour
1-teaspoon salt
1-teaspoon baking soda
1-cup sour cream

Beat eggs .. add butter
sugar and vanilla and beat
Stir in sour cream.
Sift dry ingredients
and stir into cream mixture.
Drop by teaspoons onto
greased cookie sheet .. and
sprinkle w/cinnamon sugar mixture (optional)
Bake at 400 degrees for 9-12 minutes

I sprinkled mine with green or red
sugar decorator crystals before baking

here is another cookie recipe
I haven't tried it yet .. picture looks good
Heck I gained weight looking
and I haven't ate any of this stuff in forever


Chocolate Pixies

1/4 cup sweet butter
4-squares unsweetened chocolate
(I suppose 4-ounces of chocolate cips would work)
2-cups flour
2-cups granulated sugar
4-eggs
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup walnut or pecans
~~
powdered sugar


In a small saucepan over low heat.
melt butter and chocolate.. stir to blend.
Cool ..
In a large bowl, beat chocolate mixture,
1-cup of the flour, the granulated sugar,
eggs, baking powder and salt until well mixed.
Stir in remaining 1-cup flour and the nuts.
Cover .. refrigerate until firm .. two hours
or overnight.
Shape teaspoonfuls of dough into 1-inch balls.
Roll in powdwered sugar. Place 2-inches apart
on greased cookie sheets.
Bake in preheated 300-degee oven
12-15 minutes until firm to touch
remove and cool

ENJOY
