Op, I love the collard greens too. Cook them for hours with some ham hocks, garlic, onions, fat back... Mmmmm.

Sounds good. There is a place in Canberra I go to dine once every so often it is called SoulFoodKitchen owned by a man from New Orleans.. it is such a fun place. The owner me and we often have a dance or two to the live band and he even hands out beads on special functions.

MMMM, I like what you chose there. I also like beef brisket and red beans and rice with andouille sausage mixed with some creole seasoning. Now add some sweet ice tea and pecan pie an we have a meal.

Spaghetti may sound boring but if you do it like I do it's anything but.

Heat your olive oil with seasonings until aromatic (very important!)

Add lean beef stew meat cut in small pieces, until browned.

Add tomato sauce and diced tomatoes (I use garlic and basil tomatoes from the can).

let cook about 3 hours, stirring occasionally.
