Use a smoker and do the wings in there with lots of maple chips. Soak the chips in a mix of water and maple syrup, and smoke with very low heat for a few (maybe 4-6) hours.
Toss the wings in milk, then seasoned bread crumbs, then into an egg wash, then finally into a light batter. Fry until crisp then toss in your sauce to cover.
For batter, I'd use a simple beer recipe (cheat: bisquick mixed with beer to a thin batter) dip, then right into the fryer.
For a maple-based Sauce- Cut up a couple of jalapenos into a quart pot, add a little oil, saute until the peppers are soft, add about a pint of maple syrup and reduce by about 1/2. Add Chili oil, Tabasco, black pepper, and old bay to taste.
