If this aging memory is on the right track, the ratios for birch are very different - something like 45 - 50 to 1. Not as sweet, either.

Birch runs are different, also. Not as much sap, and not so dependent on the temps. It can flow right into Memorial day.

You're shakin' the cobwebs, rh!! Grandparents house was in a large grove of white birch, 40 trees at least, partridge would flock up in the tops an hour before daylight, feasting on the new buds. Those, and maples on the north side of the garden tapped.

I've never tapped a birch, but the sap sure did run out of them when I was spotting and painting property lines! They seemed to start running just when the maple stopped... for three months every spring I couldn't finish a job and turn in a bill. Ah well...
(I always like seeing those partridge in the birch in December... just like going to the grocery store.)

similar to maple just more caramel flavored. after weeks of waiting my trees have finally started flowing, but this rain and snow has added a lot of water lol
