What is your take on these methods? I try to write down what I eat and keep track but it seems sometimes it makes me eat more for your thinking of food more.

I think low carb is manageable. You can get full on non-starchy veggies and lean meats without it being a high calorie meal. This makes it a low fat and low calorie diet too, so no need to count calories. You'll get carb cravings occasionally but you can give in to them here and there. It can get a little monotonous eating mainly stir frys, salads, veggie soups, etc. with lean meats, but if you're on a weight loss diet, you're eating for a purpose, not for daily cravings. A little resistance training and adequate sleep keeps it working long term, since the body adapts to weight loss dieting alone by slowing down calorie burning.

I think portion control is more important. You really have to read labels to make sure you are ferrying low fat without the added sugar or salt. Even low carb products are not always good for you due to higher calories, sugar or fat. A diabetic coach told me that writing down what you eat daily is the best way because you see what you are eating. I was also told that once you start exercising the eat habit is easier to change.

I been counting calories and lowering my carb intake for three weeks and I been faithful in recording ever morsel I eat on myfitnesspal.com and the scale barely budged. According to the website by calorie goal is at or under 1800/day to loose weight. I also been getting out and walking more for its the only kind of exercise I enjoy. Ughhh. its like i lost weight fast the first week then stagnant.

That website doesn't know your body's metabolism, no matter what it says. Your body obviously needs less than 1800 calories to lose weight.
Also, if you can, buy a treadmill that has an incline elevation to it. Walking on level ground isn't going to do much for you. A human can walk all day on level ground.

It works for short term results, but bad for your body you need carbs.. Just the right kind. A diet of 40% protein, 40% carbs, and 20% fat is the best. -- ask any fitness pro.

I've noticed many fitness pros go high protein, low carb, low fat(along with cheat meals) to get into competition shape - including exercise of course.

Heres an interesting count, just swapping from regular cola to diet drops 4000-6000 calories a week. Thats 4-6 cokes a day. That for many will be enough to lose weight and lower your blood sugar.
