I just tried this today-- I lowered the fat by subbing low fat soup, low fat broth and light cream cheese-- I also added about 1/2 Cup cheddar cheese right in the soup too--
This recipe it is AWESOME-- SO easy and SO yummy-- definitely a keeper  I paired it with some chicken tenders and some cut up cucumbers with salsa ranch dip.
Easy Crock Pot Potato Soup
-------------------------
Ingredients:
1 30oz. bag of frozen diced hash browns
1 32 oz box of chicken broth
1 can of cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
3 oz bacon bits
1 cup shredded cheddar cheese
salt and pepper to taste
Directions:
Line your crock pot first 
Put the potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper.
Cook on low for 6-8 hours or until potatoes are tender.
An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving.
Once the cream cheese is completely mixed in, it's ready to serve.
Top with cheddar cheese and some additional bacon bits.

I made Tuna Melt Subs-- I put some shredded cheddar on split french rolls and got all melty in the toaster oven, topped with fresh tuna salad and some shredded lettuce-- I served with some cut up Michigan apples

Burgers on our BIG George Foreman grill-- Mustard Potato salad from the deli with some chopped up hard boiled eggs added-- sliced cucumbers.
I've recently found a great way to keep burgers moist and tasty-- mix 1 lb of ground beef with: 2-3 Tbs of REAL mayonnaise, a scant 1/4 cup of plain breadcrumbs, seasoning of your choice-- we like Lawrey's Seasoned Salt and Montreal Steak Seasoning-- get some rubber gloves on and mix it all in-- make patties and grill.
I will always make burgers this way from now on-- they are SO much more moist and flavorful-- the seasoning enhances the flavor of the beef perfectly

I got a bunch of cooking done today-- I had 2 Crock Pots going-- in one I poached a whole bag of frozen skinless/boneless chicken breasts-- so now I have that to make stuff like: chicken salad with apples/craisins-- chicken pot pie... Plus I have some yummy chicken stock left over to freeze.
In my other Crock I made some Spinach/Mushroom Ravioli with meat sauce-- 1/2 ground beef & 1/2 turkey Italian sausage. SO good
I also made a pan of homemade Blueberry Crisp -- served with some Vanilla frozen custard-- I am SO stuffed

Last night I did a Pork Tenderloin with some honey and a smokey mesquite rub-- in the same pan-- I roasted: baby carrots, cubed up butternut squash, Johnagold apple chunks and some sweet onion pieces-- tossed with some EVOO, salt & pepper, honey and some cinnamon-- It was SO yummy
I also made some Pumpkin/white chocolate chip cookies that I got at Aldi's (the kind you just place and bake) some of the cookies had NO chips and some had a LOT-- but they were pretty yummy despite that

I Made a yummy steak dinner MY way tonight-- Strip Steaks and Veggies-- marinated with: Worcestershire sauce, soy sauce, LOTS of crushed garlic, light olive oil and cracked pepper-- grilled the steaks first on my George Foreman grill-- set aside to rest-- grilled the veggies next-- red & green peppers, sweet onion, Portobella mushroom slices. Sliced our steaks and served with the veggies over a bed of homemade Rice Pilaf
For dessert-- made a pan of brownies-- served with a scoop of Culver's vanilla frozen custard and some chocolate syrup
