1 lb dried Black beans
2 lbs ground beef
2 cans of stewed tomatoes
1 whole yellow onion
1 bell pepper
1 small jar sliced banana peppers
Fresh garlic
1/4 cup Chili powder
1 tbsp paprika
1 tbsp black pepper
1/2 tbsp Sea salt
2 tbsp Olive oil
1 bottled beer
1/4 cup of grated cheddar cheese

Cook the entire bag of dried beans the day before- if you want to cheat, just use 4 cans of black beans.

Dice the onion, bell peppers, mince up the garlic, sauté these in large skillet in 2 tbsp's of olive oil, once the onions are transparent... Crumble and brown the ground beef while adding in the seasonings.

Once the ground beef is browned, transfer to a large crock pot. Add in the tomatoes, then the beans (drained and rinsed), the whole jar of banana peppers with the juice. Then add the beer.

Turn on high and let cook 5-6 hours. Once it's been simmering at least 4 hours add in the cheese, it gives the chili just the right consistency plus a little added zing of flavor.

Ingredients
Vegetable oil
1 large onion, diced
Red Chile Sauce, recipe follows
6 rattlesnake fillets, or 8 ounces meat
Double sweet corn, kernels only, to taste
Poblano peppers, diced, to taste
Serrano peppers, diced, to taste
Jalapeno peppers, diced, to taste
Salt
Directions
In a large skillet, heat the oil and add the onions. Cook the onions until they are soft and slightly tender. Add the Red Chile Sauce and the remaining ingredients. Cover the skillet and stew all of the ingredients together for approximately 1 hour. Season the chili with salt.



Red Chile Sauce:
Ancho peppers, diced, to taste

1 white onion, diced

Several tomatoes, chopped

Cumin, whole seeds, to taste

2 tablespoons honey

1 cup chicken stock

Combine all of the ingredients in a blender and process until smooth.

Caldillo (Green Chili Stew)

10 - 12 Fresh Green Chilies
1.5 lbs pork or beef
2 lbs potatoes
2 medium onions
1 head of garlic
Salt & pepper
3 TBSP oil

Wrap entire head of garlic in foil. Put garlic and chilies on cookie sheet, and put in oven on top rack with oven on broil.

Shake cookie sheet every minute or so to turn chilies, until the skins on the chilies are blackened.

Remove from oven, peel chiles and cut them into strips. Peel your (now roasted) garlic and mince.

Cube pork or beef, coat with salt and fry in oil until browned.
Add cubed or sliced potatoes
Add garlic and cut up onions ( you want chunks, not slices)
Let fry for 5 minutes while stirring.
Add chilies
Add enough water to cover all ingredients
Let simmer for 1/2 hour. Pepper to taste.

I find that sometimes adding a bouillion cube or two helps adds some richness. Beef cubes if using beef, chicken cubes if using pork.

And if you'd like to generate your own personal force field or find solitude in the midst of a crowd, add 4 extra heads of garlic.

Ive heard multiple famous chefs say to use unsweetened cocoa powder..never dark chocolate. I have a great spicy cocoa rub for steak that is amazing.

Another tid bit...when use cocoa powder in baking instead of cocoa squares you need to substitute baking powder for any recipe that requires baking soda. Easy was to remember...powder with powder.

Here in the northeast we use beans for chili.

For chili to put on hotdogs...no beans at all.

I know in the Chicago area they have chili without beans they put on pasta too.

If you go without the beans you are going to need more meat and a thickener like tomato paste.

I just want to make a good showing at work, you know, making an effort to fit in and socialize with the new coworkers and hopefully feed them some awesome chili. I am going to give my buddies recipe a trial run tomorrow to see how it turns out.

There are no rules for the works competition that I've seen.

Beef chili? Use the best beef. Buffalo, highlander, or limosine meat. Brown it nicely, slow, and steady. Do not be afraid of keeping a steady cooling while browning with water, cooking sherry, or beer. Fatty meats do not add flavor. Poor quality meats ruin chili recipes.

Beans? There are so many. Dry, or canned....they all need to be rinsed. Dry beans boiled, and double rinsed to remove starch that ruins flavor. Kidney beans, Frijoles, Red beans, White beans, Pinto beans....there are no rules. Only choices. Always detach your beans.

Veggies. No rules. But if you put corn in your chili...I will never speak to you again. onions, and shallots are a great start. Make sure the shallots are cut small or minced well if they are eye watering strong. Onions diced, and if you have chive shoots...mince them. They add as much flavor as onions themselves. Garlic. You can over garlic a chili immediately. Nice rule...one pinch per quart. 7 quart crockpot...7 pinches, or one tablespoon. Fresh garlic is best. Minced well.

No garlic in the recipe.

No corn either.

His called for yellow onions, I'm not a fan so I bought some sweet onions, because I am sensitive to onions and like them better.

Peppers...fresh. Green, yellow, orange bells, chopped. You can get into exotic peppers easily. Chili peppers, Pinto peppers, cherry peppers, banana peppers, Piri piri peppers, mild jalapenos...the choices are endless. Never make a chili hotter than your audience. Always make it palatable for everyone. Go as mild as you can go. Your spices will cover your flavor, and your Scoville factor.

....yes. it should cook through at low in 3 hours, and then turn it to warm. If you leave it on low too long it will start to dry out.
