I know the feeling. I've actually started keeping a notebook of what books I've read - it's also a good way to track the progress of how fast you read each book.
As far as what to read - I highly recommend the Dragonlance Novels by Margaret Weis and Tracy Hickman or anything by R.A. Salvatore.

If you haven't already, you should join Goodreads, or one of the other cataloging sites. Keeps track of what you've read, and makes recommendations based on your "library", too. It also has a bit of a social aspect, as well.
Anyway, here are some series you could explore:
Discworld series, by Terry Pratchett
The Thursday Next series, by Jasper Fforde
The Harry Hole series, by Jo Nesbo
Hyperion series, by Dan Simmons
also, Harry Turtledove has written numerous alternative history series, most of them incorporating either magic or aliens.

If you liked David Weber, you might try the Safehold series.
I'll also second the Thursday Next series too.
The whole "Jurisfiction" concept is so bizare and entertainng.

OK, well you could alway go for some clasic sci-fi.
EE Doc Smith and the Lens Men seiries.
Or, if you liked Honor Harrington, there's a similar
series by Elizabeth Moon the Vatta War series.
Although it's not military, but the leading character has
similar personalities.
