I thought this thread was about what you DO eat

For some reason when I'm taking the medications I'm supposed to-- I crave acids like: lemon juice, vinaigrette salad dressing, pickles, olives... I also crave vegetables and in particular this marinated veggie salad-- I'm borderline obsessed-- have it almost EVERY day. I've even brought the ingredients along to make it at a hotel.

Diced up: Roma tomatoes, green pepper, English cucumber, onion-- marinated in a Lemon/Oil/Mint dressing I make myself-- SO good

My Mexican Beef is just as good if you swap out boneless/skinless chicken thighs (they hold up to crock pot cooking better) Just pull the chicken out of the liquid once done and shred with 2 forks-- put back into crock and then add the other ingredients

I really miss having a grill-- our apartment complex doesn't allow them I can make a whole meal on a grill-- even dessert-- grilled fresh pineapple slices are insanely good (brush with butter and once you turn-- sprinkle with cinnamon sugar)

I have a LARGE George Foreman grill we use a lot-- grilled, marinated Catfish or Tilapia is good (lemon/pepper is yummy) I sometimes make extra-- flake it up and use instead of tuna for sandwiches with mayo, diced celery & onion... YUM!

Tonight's dinner...

Garlic Herb marinated chicken breasts (frozen pre-marinated from a super Target store) on my George Foreman grill

I boiled some skin on cubed Yukon Gold potatoes in chicken stock, drained over frozen sweet peas-- tossed the potatoes & peas with a bit of butter and some garlic salt and dill weed.

I diced up some: English cucumber, Roma tomatoes, green pepper and sweet onion and marinated in a lemon/oil/mint dressing.

We're gonna make burgers on our George Foreman grill tonight-- we swap out toasted English Muffins for buns-- SO much better, all those nooks and crannies hold the ketchup and stuff and they don't get soggy like a bun might. I like to lightly season our patties with a bit of Lawrey's Seasoned Salt and a touch of Montreal Steak Seasoning.

Sometimes-- when it's TOO hot to heat up the whole oven-- I'll turn my Italian Meatloaf mix (which has: lean beef and a bit of bulk Italian sausage, diced onion, Italian seasoned bread crumbs, garlic salt, cracked pepper, Italian herbs, a bit of ketchup, tomato paste and an egg to bind it all up) into patties and grill em up-- Turn a regular burger bun into a garlic/cheese roll in my toaster oven-- top with mozzarella and a "kicked up" ketchup I make by combining: tomato paste, ketchup, a touch of olive oil, garlic and Italian herbs in a saucepan til warmed thru-- SOOOOO damn good

I've got a crock going with about 9 boneless/skinless chicken breasts and about 2 cups of chicken stock made with: 1 1/2 Tbs of good chicken soup base, ground pepper, some poultry seasoning and some Lawrey's seasoned salt.

Gonna take half the chicken and save for a casserole-- freeze the wonderful chicken stock once I've strained it and then I'm gonna shred the rest of the chicken to make these...


Chicken Caesar Sandwiches (found it on Pinterest-- SO delicious) I serve on a toasted mini sub bun with shredded lettuce and sliced Roma tomatoes. SO easy-- once you've shredded your chicken with 2 forks-- return to your crock-- add a bottle of your favorite Caesar salad dressing, about 1/2 a cup shredded (NOT grated) parmesan cheese and some minced parsley. Let cook in the crock an additional 30 minutes and then make your sandwiches.
