no_toe_jam, That sounds delicious and I will certainly try it!

Here is an old family favorite that is easy to fix and it goes back to at least when my grandmother fixed it:

MEAT LOAF

2 pounds ground round steak
2 eggs
1 1/2 cups bread crumbs
1 cup chopped onions
1 cup chopped bell pepper
1 cup ketchup
1 tsp Accent
1 pkg onion soup mix

Mix thoroughly in a mixing bowl
Put into loaf pan and flatten
Cover with 3 strips of bacon
Pour over top 8 oz. can of tomato sauce and smooth
Bake 1 hour at 350 degrees
Serves 6

Nothing wrong with Deer Meat Loaf either and in fact it's more healthy than hamburger.

Sugar Cookie Cheesecake Cups

Ingredients
2 8 oz. bars of cream cheese
3/4 cup of sugar
2 eggs
1 teaspoon vanilla (or lemon or other extract)
1 log of sugar cookie dough
1 can of pie filling (cherry, strawberry, lemon, etc.)

Instructions
Preheat oven according to sugar cookie dough package directions.
Place cupcake liners in a regular cupcake pan.
Mix together cream cheese, sugar, eggs, and vanilla in a bowl and set aside.
Place 1/4"-1/2" slice of cookie dough into bottom of each liner (may have to manipulate dough a bit to lie down nicely).
Bake "crusts" for roughly 10 minutes (they will make the liners look a bit greasy).
After crust is done. IMMEDIATELY add about 2 tablespoons of cheesecake mixture in the middle of the crusts and place back in the oven for 20 minutes.
Let cool and top with pie filling of choice.

The Sugar Cookie Cheesecake Cups look really good! Here's another really good and simple recipe:

Cream Cheese Bars

2 packages Crescent Rolls
2 8 oz Cream Cheese
1 cup Sugar
1 tsp. Vanilla

Mix the Cream Cheese, Sugar and Vanilla until smooth

Spread one package of Crescent Rolls on the bottom of a 9 x 13 cake pan

Layer the cream cheese mixture on top

Spread the other roll of Crescent Rolls on top, smoothing out the seams as much as possible, or use a rolling pin if you really want to make it look pretty.

Bake at 350 degrees for about a 1/2 hour or until the rolls are done.

Not at all Tommy You can use fat free crescent rolls and cream cheese but I don't recommend it because they don't turn out quite as good. I have used the Greek yogurt cream cheese and you couldn't tell much difference. They are quite yummy!!

Why do I love things that have so many calories? My schedule for tomorrow is already planned which is 5 extra miles on the treadmill at my health club. I've got to keep my teenager figure you know . . . don't I wish!

Yes I know. Fortunately I have been blessed with skinny genes but sometimes that comes with its own set of issues. I have cut back on the sugar in that recipe if that helps. I think moderation is the key.

Sweet Potato Hash

This hash is both sweet and savory. You can also add eggs to make a one-pot breakfast scramble.

Ingredients
• 1 Large Sweet Potato – Diced
• 3 oz. Yellow Bell Pepper – Diced
• 3 oz. Red Bell Pepper – Diced
• 2 Cloves Garlic – Minced
• 1 lb. Chicken Sausage
• 5 oz. Onion – Diced
• 4 Tbs. Olive Oil – Divided
• Salt and Pepper – To taste
• 1 Large green onion – Chopped

Directions
In a large non-stick skillet, heat 2 Tbs. olive oil over medium-high heat. Once pan is hot, add diced sweet potatoes, peppers and garlic. Cook until sweet potatoes are tender and browned.

While the sweet potatoes are cooking, heat a second large skillet with 2 Tbs. olive oil over medium-high heat. Once oil is heated, add chicken sausage, onions, and salt and pepper. Cook until the chicken sausage is no longer pink and the onions are translucent and soft.

Combine the ingredients of both pans. Garnish with green onions and serve.

Crockpot Pizza

Makes/Yield 10 servings

You can add whatever toppings you want.

Ingredients
• 1 lb. Ground beef
• Pepperoni
• 1 can cream of mushroom soup
• 1 large onion chopped
• Parmesan cheese
• 4 cups mozzarella
• 16 oz. rigatoni
• 24 oz. spaghetti sauce
• Garlic powder
• Italian seasoning
• Salt and pepper

Preparation
1- Boil the box of pasta for 5 minutes and drain
2- Brown meat in skillet and season with salt, pepper, garlic powder
and Italian seasoning. Turn off heat. Add the onion and spaghetti sauce.
Don’t cook the onion ahead of time, because it comes out crunchy.
This is also where you might want to add other ingredients like bell pepper.
3- Start layering in crock pot:
4- 1/2 of sauce mixture on bottom of pot
5- 1/2 of rigatoni
6- 1/2 of soup mix
7- Sprinkling of parmesan cheese and 2 cups of mozzarella
8- Pepperoni in single layer
9- Repeat layering
10- Last layer should be pepperoni.
11- Set on low for 4 hours
12- **This is for a large 6 quart slow cooker. You can scale down
the ingredients and make in a smaller pot.**

Spicy Drumsticks

Ingredients
• Nonstick cooking spray
• 4 chicken drumsticks (about 1 pound total), skinned*
• 1/2 cup bottled picante sauce
• 2 teaspoons bottled cayenne pepper sauce (such as Frank's Red Hot)
or 1/8 teaspoon cayenne pepper
• 1/2 teaspoon smoked paprika
• 1/4 teaspoon dried thyme, crushed
• 1 bay leaf
• 2 teaspoons olive oil

Directions
Lightly coat an unheated 3- or 3 1/2-quart slow cooker with cooking spray.
Place chicken in the bottom of the cooker. In a small bowl combine picante
sauce, pepper sauce, paprika, thyme, and bay leaf. Spoon over chicken in cooker.

Cover and cook on low-heat setting for 6 hours or on high-heat setting for 3 hours.

Transfer chicken pieces to a serving bowl. Remove bay leaf from sauce in
cooker; stir in the oil. Spoon sauce evenly over the chicken. Cover and
let stand for 10 minutes to absorb flavors. To serve, spoon 1 teaspoon
sauce over each drumstick.
