Schmierkase means spredcheese in German. This is a German Cheese Cake, this is how cheese cake was made before using creamcheese. I have traveled all over the U.S. the only place I have found to get this cake is Baltimore, MD. You can hardly find it there either.
Schmierkase Cake
Crust
1 1/4 cups un-sifted all-purpose flour
1/4 cup sugar
1/4 tsp. salt
1/2 cup butter or margarine
1 egg, beaten
Filling
2 eggs, separated
1-pound small-curd cottage cheese
3/4 cup sugar
2 tbsp. cornstarch
1 tsp. vanilla
1 cup sour cream
Preheat oven to 375 degrees. For the crust, combine first 3 ingredients; mix well. Cut butter or margarine in until mixture resembles coarse cornmeal. Add egg; mix well to form dough. Pat dough into a 13-inch-by-9-inch-by-2-inch pan coming halfway up the sides of pan.
For the filling, beat egg whites until stiff but not dry; set aside. In a large bowl of an electric mixer, combine remaining ingredients; beat until smooth. Fold in egg whites; pour into crust. Bake for 55 to 60 minutes.
Serves 12.
