The coffin claim isn't true, but even if it was, human fossils aren't the only evidence for evolution. Massive numbers of fossils of non-human animals and plants also confirm that life on Earth has evolved and changed over time. Fossilization is rare. We're lucky to have any fossils at all. And the bulk of evidence for evolution comes from living organisms and from genetic evidence. There's no doubt whatsoever that life on Earth has evolved and is evolving.

There is no doubt that the earth has evolved and is evolving. There is no doubt that the species have changed over time. What has not been proved, what there is zero evidence for, is the hypothesis that large mammal species evolve so much that the new animal cannot interbreed with the parent stock. What has not been proved, what there is zero evidence for, is that man evolved from some other species.
This is where the evolution hypothesizers are dishonest---they say that because change has taken place, because species do change over time, that one species MUST be evolving into other species.
A friend of mine in college believed in the hypothesis that man evolved from another species or other species. He was fond of saying, "all evolution is, is genetic change over time."
"Oh no you don't," I stopped him one day when he pulled that on me. "Of course species change over time. People are taller than they were 1000 years ago, for instance. But just because species, including homo sapiens, change over time does not mean one large mammal species has ever evolved into another species."
Although he continued to believe that humans evolved from some other species, he did grant my point there, and he did admit that evolution of one large mammal species into another has never been proven.

A velociraptor, for example, had a skull like a coyote’s and a brain roughly the size of a pigeon’s.
