Well when I was a young lad and f**king older women, their "experience" factor (that's a bullshit line older women use to try and give themselves value over the young) had nothing to do with the reason for me f**king them.
It was because the younger women were pickier about who they f**ked, the older ones were easy targets.
Men will f**k women of all ages 18-60. If a 23yr old man f**ks a 50yr old it's not because he's particularly into 50yr olds...it's the fact she said "yes".
Now that tends to fly in the face of what older women want to believe, naturally they try to defend themselves by using crap like "I'm more experienced"..but that's all it is, defensiveness ...then you get a few "white knights" saying "Uhh yeah ladies, I prefer your experience"...any idiot should be able to see through that lowly strategy 
So yeah basically it's availability and willingness. Older women know their options are limited, they are also feeling their age, when a young man shows interest in them, it's their chance to be young again and so they jump at the chance.
There is at least one bar in every larger town that's full of em...when I was in my 20s it was "The Ritz"...the patrons were nothing but 40/50yr old women and 18/25yr old men/boys...the men/boys looking for an easy lay and the 40/50yr old women looking for a taste of their youth again.
Many truths in this post. Although the youngest man I've been with was only 2 years younger than me. I have to say though that I find myself to be far more picker now than when I was younger, in my 20s.

Well, if you're talking about yourself...at 24 you're more mature and possibly more attractive than you were at 19.
So he may find you more attractive, may think you have more experience, may think you're more rounded out than a 19, more understanding, etc.
When I was 19 there was a 40-something woman I liked because she seemed like a great person, physically fairly attractive, someone I might dig.
At 12 there was this 30-some woman, blonde, sporty, that I dug etc.

But I will say this as opposed to my usual....its for the easy come and go sex, where both get what they want...and I guess that falls under "knowing what she wants" I suppose.
There are times where either gender who is legit in wanting a certain kind of love and etc and can't find it with ones their age, and eventually seek older ones thinking this will solve the problem... I know this because I've had a few women in their 20's seek me out for this same reason on dating sites before.
As far as the really being the case with older people?... perhaps with some, but certainly not all.....when I first started dating again after a 30 year absence ...I figured this would be easy, because we are older and know ourselves better and what we want and etc... .yet found most older women near my age to be more unstable and mixed up, than what I remembered in younger women, when I was a younger man.
