Home brewing is still illegal down here, but maybe soon the law will change.
Therefor I must deny that I am brewing my own anything.

True I leave the state to brew
I know one gentleman who makes sake, I personally never have. Should be fairly easy

What yeast are you going to use it can greatly affect the flavor. Your right though rice will give base sugars and flavor from other additives.

I'm not real familiar with wine yeasts. However I know there is a product called campden which will stop fermentation.
If you know the final gravity you were trying to achieve you could take readings and stop it.
A bubbling air lock is a happy sight. Currently have an IPA started.
I'm going to try my first batch of wine this fall to give as Christmas presents found ice wine kit.

Being from Beer City, USA, I know it's cheaper to buy your beer than to make it yourself. Plus you know what you are getting and there's no experiments gone awry.
