ever happened to you. I just remembered my swordfish steak. I put it in the oven 2 and a half hours ago. That sucks.

I am sure we all have. But one time I forgot about a rabbit on the pit. I think it was the best I ever ate. The fire had burned out and keeping it warm.. I had wrapped it in foil with butter..

I just tried sword fish for the first time last week. I baked it and marinated it. Next time I will either sear it or broil it.
I come from a sicilian family. We love swordfish. This is the sicilian way to cook it. Brush it with olive oil then put paprika on it with salt pepper and dabs of butter or margarine.Then bake it for about 15 min at 325.
While it's cooking make what is called a salmiriglio sauce. Its lemon juice, garlic, parsley, olive oil, with some white wine.
When the fish is almost done dump the salmiriglio sauce over the fish and let it go for another 5 to ten minutes.
I don't think broiling swordfish will work to good. The grill will work fine if your set up for it. It can stick which is really bad. If you grill then just bast with the sauce and pour some on top when you plate it.

any type of fish can be broiled in the oven or cooked on a bbq grill..swordfish included..
its the technique and talent of the cook and not the species of fish that leads to success..
dont wont your fish to stick on the grill: preheat the grill on hi.. then clean the grate..if its a shiny clean grate, oil the grate after its hot..if its a black carbon coated grate-oil the fish lightly but not the grate..
and dont turn fish until fish lifts up easily without sticking..it will free itself if you have patience..

Yeah I have done that before, sure can ruin a couple of salmon filets.
BTW to keep fish from sticking lay it on lettuce leaves to broil it and voila no sticking.

You guys seem like masters of the trade to me. Lol I'm so new to cooking and you have all these tips for keeping fish from sticking to the grill. I never tried fish on a grill because I figured with my luck it would get stuck and burn up to a crisp.

some of the best I ever had was simply wrapped in foil with butter and a little lemon pepper spice. The simplist is most of the time the bestest..
