Ground venison works really well in tomato sauce as the acidity helps tenderize it, especially when you leave it in the fridge overnight.
Also works well in chili and casseroles.

Just use it like you would hamburger meat. Heck I grind raccoons and do the same. The only thing would be cooking it too long. There are a ton of recipes on cooks,com also. I love that site. Just put venison burger in search box.. Merry Christmas and enjoy that venison..

Here's an old family recipe for venison sausage:
6 lbs venison, trimmed (fat, silverskin & gristle removed)
6 lbs pork (use a fatty cut, such as a boneless shoulder)
14 tsp salt
15 tsp sage
6 tsp pepper
5 tsp cayenne red pepper

Grind refrigerated meat coarsely. Mix in spices and gently stir to thoroughly combine and incorporate them into the meat mixture. Grind fine, then allow to set for 12 hours prior to cooking in order to let the flavors mingle. Cook, or package & freeze.

If you have the backstraps, try this:

Slice the backstraps into 1 1/2" medallions, or into 3" medallions and butterfly them.
Gently heat 2 tablespoons of butter plus 1 tsp Worcestershire sauce in saute pan.
Lightly sprinkle each side with kosher salt, then press both sides of the meat into coarsely ground pepper (I like the McCormick Pepper Medley). Saute the meat until it's medium rare, turning once. Don't overcook- meat should be pink in the middle. If desired, whisk in some heavy cream with the pan drippings and make a nice cream sauce to serve with the meat.

I've got a deer right now that will be converted into sausage, jerky and BBQ goodies- enjoy!

I'm marinating a backstrap all day in Dale's, dark brown sugar, balsamic vinegar and olive oil with garlic, onion and Greek seasonings. Will seer it then roast it for about 30 minutes on 500. It should be medium rare. Then rolls, horshradish,.etc for little sandwiches for the AL football game tonight. just need to figure out what will go with it.

My Awesome Italian meatloaf
Ground Deer Burger it too lean and needs some fat., so I always added one of those cheap sausage rolls to about 2 lb of meat.. Then I mince up peppers and onions add some barbeque sause, 1 egg. teaspoon salt, pepper, garlic powder. Italian seasoning , oregano, celery seed.
Mix up well Then add about a cup of Italian bread crumbs. Mix in Well till it feels right to be shaped into a long loaf. I use a big cake pan
I like to put Bacon strips lined up on top after spreading some barbeque sause and catsup.
Place in 350* oven about 1 1/2 hours.

** You can also shape this mixture Into burger patties for the grill. They are good to freeze to have on hand to use.

Ground deer Burger is great in chill also to use in tacos

All I can say is if the word was out I made these things it was funny how all my sons friends all showed up when he lived here.

Jerky is good too
Cube up loin meat for stew

Steaks or sliced loin coins are great put in a roaster covered with sliced onions and mushrooms Then add some. Brown gravey packet and water also can of cream of mushroom soup. Cover and put in 350 * oven about 1 1/2 hour. Mmmm comes out so tender and serve that gravy over mashed potatoes

Ex new York city butcher (best in world among butchers). When gutting deer never touch tarsal glands on hind legs, the eyes, the few claws. That's were game taste comes from. Do this meat never be gamey. On backdrops and tenderloin remove all fat and silver skin sinew cook like steaks in Ian keep rare. Hind legs remove all fat sinew coat whole solid pieces free of membrane sections and all tendons coat with steak season never cook above 312 in any deer fir fat goes rancid. Cook on low temp till meat is 128 unreal, let rest for hour, slice then. Front legs and all shank meat goes in crock pot for 11 hrs. The membrane falls meat apart like pulled pork, add whatever to pot. Trimming made into hamburger but don't ground meat first day sit in frig fir 3 days to drain blood so meat isn't soup after grinding. Hamburger does well as soup additive. Try this you never be sorry Michael

sorry but the (((DEW)))claws I never worried about..I agree on all silver meat to be removed.. and I have ground meat the same day. Mind ya it was about 6 hours after soaking in ice water.. You info is cool but your not the king..I also cook around 275 but if it hits 350 i do not freak out..
