A Carmenère is very similar to a Merlot in a lot of ways. In fact, vintners thought that Carmenère was extinct for a long time due to the philloxia outbreak in France , and just assumed the grapes growing in Chile *were* Merlots, until scientists discovered that it was indeed surviving Carmenère.

You get deep black cherry flavors, dark chocolate, black or green pepper (tends to be a Carmenère signature) and sometimes leather, tobacco, and jam depending on the terroir. It's not very well known to the average wine drinker, and is a great wine to help red lovers expand out of the Pinot Noirs, Merlots, and Shirazs'.

I enjoy most cabernets for a red.. La Montecchia is one of my favs, in the white category, a Pinot Grigio. For a little sparkling my fav is Mamertino red or white. Good luck in your wine making adventure.

If you are making it at home I would stay away from the heavier varietals such as Cabernet and Sangiovese since they really need oak to bring the flavor out. For red, I would go with either Grenache, Carignan, or maybe Syrah since you can make a great unoaked version of each.
For white, the Riesling is s great idea as it is really under appreciated. Two other reccomendations would be a Sauvignon Blanc that you stir the lees extensively. This would give it more body and character. Lastly, this one might blow your mind, white Pinot Noir. What you do is just separate the grape skins from the juice immediately after pressing. A couple great Oregon wineries make this and it tastes spectacular. Let me know if you have any more questions, would love to help.
