You can do it, but I make jerky, and grind up most of the rest and make sausage with it.
If you use natural casings the sausage can be smoked and stored.
You got internet, google the subject.
I have a book on meat preservation and making of hams, sausage, and bacon. Duck lends itself well to this kind of preservation as well.

Run it like canning anything. Put pieces in jar ( no liquid ). Put a tsp of salt on top. Then seal like you would veggies. Simple.
