the problem isnt whats most lucrative (ie profitable) the issue is which farm has to most expensive overhead and startup costs.
If you have free resources to START the farm (free calves or piglets or chicken whatever) then any farm can theoretically make more profit for you in the short term than one in which you have to buy everything first.

ill say this as the organic and local trned keep increasing if you wan get in on that action you might do well. like goat cheeses and goat skin creams and all that.
dairy free and gluten free are industry buzzwords right now
