I read it recently, Catlover. Interesting read. Wheat actually has a high glycemic index, so the carbs turn into sugar and fats in the system. Giving it up or minimizing it helps improve cholesterol, improves bone density, reverses skin conditions and arthritis. I only eat whole wheat or whole grain bread once or twice a week now. I recommend the book.

If you subtract the grams of fiber from the grams of carbs, that's how a diabetic counts it. Read more about that. There is more fiber in whole grains. That is why it's healthier. A body does still need carbs to function.

No I didn't read it. I have a friend who went to a nutritionist and now she avoids Gluten; I'm sure that is covered in that book. Wow! I used to think wheat was good for me and my belly. Now what? buy gluten free if you can afford it.
