I meant to prepare a healthy salad last night after returning from an exercise session, but was so tired that I saved time and energy by making beetroot toasties instead. For anyone who wonders what they are - I just invented 'em last night. They comprise two slices of bread toasted and coated with Bertolli low fat spread with sliced beetroot sandwiched in between. Yum. I had some bananas too. Total preparation time: about four minutes. Chicken soup

Throw cleaned chicken whole in the pot
added water to cover it
Boiled it till chicken meat falls off bone----leave bones in pot some say adds vitamins
Added chicken stock& veggie stock
add carrots---I don't peel them just clean top and tail them
onion peel chop up fairly big
add celery chopped fairly big
add potato
clean skin still on chopped fairly big--- add green beans--top and tail them add a bit of salt
Go and read forums on DH---put on simmer make sure u keep liquid (water added)


Find soup cup with handle --- Spoon out some taste add more salt or stock powder till your happy

can add Noodles if u feel like chicken noodle soup---

In Morning if on DH
Shreddred wheat in bowl
banana or strawberries cut up if I got Them--- both if I got them
sugar--milk on shreddred wheat also
Hot Coffee white to drink
Orange juice --if I got it


b4 DH if it's a good morning
Bacon eggs Toast coffee --Orange juice



Quick snack
Just boil noodles drain
add margarine
salt pepper


Lettuce
tomato
cucumber
onion
roughly cut up
add olive oil
vinegar
salt pepper
Can use like ranch store bought dressing


I know not fancy but so far fairly healthy

We use our toaster oven for quick meals a LOT in our house-- take a burrito size tortilla, add your toppings-- place right on the rack for a few minutes-- wrap up and nom nom nom

I like cheddar cheese all melty and then add some tuna salad for a Tuna Melt Wrap

Spread some pizza sauce-- add 4 cheese Italian blend-- some pepperoni, small pieces of ham-- get all melty and wrap up.

Spread some refried beans on it-- top with sharp cheddar or Mexican cheese blend-- get melty-- top with a mixture of: 1/2 light cream cheese, 1/2 salsa, some ground cumin, chili powder (warm up to melt the cream cheese and blend well)

Spread some peanut butter or Nutella-- add slices of banana-- get nice and melty and wrap up-- a drizzle of honey and sprinkle of cinnamon is good with the peanut butter & banana too.

In a small saucepan-- bring some chicken stock to a boil-- add some: salsa, ground cumin, chili powder, garlic powder-- next add in some instant BROWN rice-- (make according to package with the right liquid/rice ratio-- I usually eyeball it) COVER IT-- Let rice soak up all the liquid (usually takes about 15-20 min)-- add in: some frozen sweet corn and a can of Chili beans (the kind with the sauce) or rinsed black beans. We'll often just top with cheese and light sour cream-- or use as a filling for a burrito wrap too. Rice + Beans = protein-- so this is a cheap-- filling-- nutritious meat free meal

I try to eat more protein verses carbs (I have insulin resistance-- eating this way makes me feel better and have MORE energy)

One quick meal is to simply dice up some tomato-- salt and pepper to taste and mix with some cottage cheese.

We just started doing meatless Fridays (fish allowed) for religious reasons. We're used to having a lot of meat, so we had to be creative for lunch.

I had some leftover homemade meatless chili beans and mixed it with some cheese ravioli from Trader Joe's (the dried ones.) It made a nice lunch.

Just had cold fried Hot dog Dipped in American Mustard

now orange juice

maybe leftover yoghurt if it's still good

In college we used to mix ramen noodles and stove top stuffing together.
The other easy meal we did a lot was pasta, tuna fish, butter and Parmesan cheese

Threw left over corn, mashed potatoes, and Mac n cheese all in one bowl then nuked it.

Throw a bunch of stuff in the crock pot, turn it on, and go on about my business for the day. When I get home or the designated time of completion for the meal is when I can chow down on a home cooked meal that didn't take all day to make. Well, an entire day's labor anyway.

Cottage cheese with lemon juice and pepper, sometimes cold turkey hot dogs to go with. Pulled right out of the package.

always have grilled or baked chicken in the refrigerator. Most of the time, I chop them all up in nice bite size pieces. you can make anything then...

A plate of nachos layered with chicken and cheese.

Put a handfUL of cooked chicken, water, chicken boulion and rice, noodles or veggies for soup.

chicken, diced onion, Mayo and a diced dill pickle on a hoggie.

Chicken BBQ sandwiches

chicken as a side to any veggie.

Cooked chicken in the packages at the store are great to have around, but a little pricey.

I'm out so I guess I'm grilling a half grill ful of chicken tonight after it cools off.

Boiled Shrimp is my quickest-easiest meal and having a shrimp camp to get my own makes them always handy....usually twice a week at least.
