Well op....there are women primarily seeking sex too, instead of a relationship...or untill one comes along. Of course not with just anyone, though a few are like.
So, why would they just seek sex instead of a relationship.?
Could be depending..the same reasons as the men who do this.
There are varied reasons...but I bet many of them are the same reasons.

Op...I went by your point of only sex vs. a LTR committed relation...the last sentence.
Not everyone wants a LTR committed relation all the time, unless we're talking a lifetime for sure partner.
They may get out of one and there are scars to heal...and/or they just don't want the hassles/involvement of a full fledged relation right now.
But still want some interaction with the other gender...many times that means a FWB.
if that FWB is primarily sex....then there you go, and why I said either gender may only want this at a particular time.

The answer to this, depends on the guy, and on exactly what happened. There are lots of permutations.
At very young ages, lots of people, male and female alike, are only after the fun of the moment. It's the kid-loose-in-a-candy-store scenario. The main thing at that stage is, that they aren't even able to conceptualize the long distant future, much less plan about it.
After that first rush period, it's common to see people who once DID want something long term, react in resentment and anger to having had several hoped for LTRs go bust, by discarding the idea of LTR altogether.
Then there's a side group, also well populated, who really think they DO want an LTR, but as soon as they start having sex, they lose sight of the fact that there's more to it than just getting laid regularly. Lots of them aren't even aware that there IS anything more to an LTR, than regular sex. They see relationships with the opposite sex the same as relationships with local gas stations: whenever you need a fill up or a tune up or repairs, you go in and smile, and when everything's purring, you head out elsewhere and have fun there.
And one last mention, there's guys who women complain about later who DID want a real LTR, and thought that she was it, only to find out after sex, that this one ISN'T it after all. From the guys point of view, it was a failed attempt at an LTR, but the woman decrees that he was a schemer who was only out to score.
Now ask why some people DON'T want just sex, and DO want the LTR. It's not all saints there either.

If you want a simplistic answer then it's because men don't get pregnant.
For men, there are no serious consequences, only upsides.
If a guy gets a woman pregnant, great, his DNA is passed, he gets a sense of fulfillment, and he doesn't have to go through childbirth.
If a guy doesn't get her pregnant, oh well, he still got the pleasure of sex.
If a guy has sex, does or doesn't get her pregnant, but physiologically bonds with her, then he feels the pleasure of bonding with her, plus gets the added bonus of different chemicals that reinforce his bond, and most likely more sex as that's the means by which those bonding chemicals are reinforced (of course those chemicals get weaker over time as he gets used to them, or the sex doesn't lead to babies).
If a guy has sex, does or doesn't get her pregnant, but doesn't bond with her, he doesn't have to wait 9 months going through torrential hormone shifts or physical changes before getting back to normal and being able to mate or bond again. He is free to move on anytime.
There's no downside, no (immediate, less than a year) natural repercussions to a guy just getting laid.
So, basically, a guy can "only be interested in a woman for only sex" because he can.
The only thing he has to deal with is a woman crying about it. That's easily avoided by finding another woman to have sex with.

People seek out relationships for 2 reasons.
