Smoked fattys. I made 2 the other day. One was a philly sub contents, rolled up in sausage, covered with a bacon weave. Other kraut, kielbasa and cheese rolled the same way. Smoked 2 hrs to a 165F internal. Just google "smoked fattys", or more specific try "fatty appreciation thread" and 9 pages of pics pops up on BBQ breathern.

Love to grill salmon steaks glazed in a homemade BBQ sauce that I make using Jack Daniels, accompanied by with baked sweet potatoes that I wrap up in foil and place directly in the coals, grilled asparagus that has been dredged in olive oil, lemon pepper and garlic salt. Then for dessert I slice plantains and drizzle them with melted butter and sprinkles of cinnamon sugar and grill to a slight crisp. Heaven in my mouth!

Whiskey ribs.
Put a good rub on ribs, toss them in a smoker.
Drink whiskey
Flip ribs as need be.

One of our restaurant favs is a slow cooked ribs marinated in Dr pepper concentrate with other herbs and spices
The dry rub is to die for too....but its my trade secret.
