I've had Tabouleh, my Bulgarian friend's wife made some. Really good. Never heard of Madras Curry...

Made a vegan version of chicken curry for my friend. Included all the veggies, plus extra that wasn't in the original recipe. And added tofu instead of chicken.
Idk the measurements but:
Heated oil
Add Green Curry Paste until it's aromatic.
Then Chopped eggplant, green beans, yellow bell pepper, bamboo slices.
Cook those then add vegetable broth, bring to a boil I believe then add coconut milk, not water.
Add (fish sauce) I used the brine from a jar of fermented tofu. Had a similar salty funky flavor like fish sauce. And a pinch of sugar.
Bring to a boil again and turn off heat. Let simmer...
Tho I find it unnecessary. It's pretty much done IMO...
I added regular tofu, not the fermented one, towards the end so it wouldn't overcook. Tofu seems to disintegrate if cooked too long.

Vegetarian includes dairy in the diet, but no meat.
Vegan is no dairy or meat.
