I've made it twice now, once with Granny Smith and once with Honeycrisp. They were both good, so I need more testing. Lol
The caramel is easy too. Though a good non-stick pan is a necessity. I use dark brown sugar which makes it really rich. I got one of those ceramic pans at the fair, you know the one where the guy melts candy (in the wrapper) with a blow torch in the pan and it just slides out.
I got suckered twice at that damn fair.

I wouldn't say "snake oil" as them gadgets actually work. The guy "got me" by handing me the torch and I cooked that sucker good. I'm talking black char, and it slid right off! Then, the f**ker let me hit the pan with a hammer. Not a dent or scratch. $19.95 sucked outta my wallet, and mine was new in the box. Good sales technique as I was trying to f**k it up. He sold one to all who watched me try to break the damn thing.
The other, was a spinning hand whisk that makes frothy, foamy milk stuff, whipped.cream, sauces, gravy with no lumps and a whole bunch of stuff in the little booklet that I haven't even tried yet. Yet.
Out of 200 or so tables/vendors, with all kinds of shiny stuff, spinning, flashing, beckoning with reckless abandon, I thought I did well. I'm normally the skeptic/heckler and the lady who sold me the whisk was rather attractive, so... I was ummm somewhat distracted. But, I do like the whisk. I got stainless.
