Tired of the boring chicken breasts I make. Looking for a new flavor. Because I have hypoglycemia, its difficult to eat WITHOUT using sugar. Hoping some of you can share some great recipes and new ways of cooking chicken!

Not sure if tabasco sause has but I fry my chicken breast with a little bit of Tabasco sauce on both side. Not too because it can get hot.

Tuscan Lemon Chicken Marinade
makes enough for about 2 – 3 pounds of chicken
recipe from Ina Garten
1/3 cup good quality extra virgin olive oil
2 teaspoons grated lemon zest, about 2 lemons
1/3 cup freshly squeezed lemon juice
3 cloves of garlic grated on a microplane
1 tablespoon minced fresh rosemary
1 teaspoon fresh ground pepper
Combine all ingredients in a 2 or 4 cup glass measuring cup. Whisk to combine. Pour over chicken and marinate for at least 4 hours or overnight.

Try bourbon or brandy, the sugar is in the alcohol and it evaporates while cooking, leaving the flavor.
Did that with a whole turkey one year, they didn't leave a scrap of meat,

If you can find a sugar free, italian salad dressing always works nice. Tonight i used malted vinegar and sweetner ( im type 2 )

One trick the restaurants use to get thier chicken to taste better is to brine the chicken overnight before cooking.
The rule of thumb for a brine solution is to have the end result taste about as salty as the ocean. It should taste good to you. Often other aromatics are added to the brine liquid such as thyme, rosemary, lemon zest, whole telecherry peppercorn, star anice, cloves, bay leaf, ect. With most of those a little bit goes a long way so do not be heavy handed. Pick and chosoe which flavors you like best.
Just be sure to keep the brine liquid and chicken covered and in a refrigerator. FYI if you have frozen meat you can thaw it in the brine but it will take a lil longer.
Drain, rinse, and cook to your desired method. Obviously you will find that the taste is differnt but the texture is improved as well. Just be sure to not overcook chicken as brined meats often need less cooking.

This dude has it going on . I remember working at Kentucky fried chicken as a kid and they did soak it in brine in a 55 gallon plastic drum. Funny how I have not been doing it since. I am going to do this to rabbit (being we raise them). I am sure it would be the same. Thanks Greg.

Chicken doesn't need any sugar added to it, unless I'm making barbecued chicken or lemon chicken or something like that. Some meats benefit from it, but no meat really "needs" it. I don't do sugar at all in my chicken marinades for the grill (I marinade it if I'm not saucing it.) I just use vinegar (rice wine works great, but even apple cider vinegar can be interesting) and herbs, like many have said. Thyme and rosemary are fantastic herbs to add into a marinade for chicken. A little lemon zest brightens it up. Some olive oil in the marinade is nice. If you need a precise recipe; For 1 lbs of chicken, use 1 cup vinegar, 1 tbsp rosemary, 1 tbsp thyme and 1/2 tsp lemon zest, and mix with 1/4 cup olive oil. Toss the chicken in it, and let it rest for 2-3 hours. I like to toss the chicken in the marinade once more halfway through. I like the results better when I remember to make the marinade a day in advance so it has time for the flavors to come together before being poured over the chicken.

The herb measurements are for fresh herbs. Dried herbs, use a little less.

Marinating chicken breasts in yogurt makes them tender and juicy.
Try Tikka Masala, you can buy it in a jar at an Indian Grocery or you could buy all of the individual spices and grind them into a Masala. If you don't already stock many Asian spices I would recommend the former.
It's best grilled but also fine baked in the oven or stove top in a pan with a little of the marinade.

I WOULD NOT recommend the brine. A brine is SUGAR, salt, and water. I dunno what that guy is thinking. I made an awesome mustard vinagriette for my chicken breasts the other day. I combined, dijon, yellow, and spicy mustards, along with salt, pepper, a little honey (which you can use very little or just skip), dried chili flakes, garlic and onion powder, a little apple cider vinegar, and blended it while slowly pouring in some extra virgin olive oil. I marinated the chicken in it for about 15-24 hours, then grilled them. They came out moist and delicious. There's so many things you can do without sugar. If you enjoy spice, I like to give my chicken a dry rub marinade for a few hours. Maybe some red or your typical yellow curry? Maybe a jerk marinade? Go to foodnetwork.com and look up chicken recipes. There's thousands. Enjoy!

The person I was quoting has no sugar mentioned.. Brine is salty water.. Ask an oilfield person if needed.. No sugar in it .. So the foodie police striked again.. You know if a person wants to add sugar to peanut butter and likes it.. What gives you the right to say its wrong ?? Geesh people this is suppose to be a friendly group .. NOT a bashng of recipe group.. Sorry - Had to get it off my chest. I think I will go eat some sugar now..

You know if a person wants to add sugar to peanut butter and likes it.. What gives you the right to say its wrong ?? Geesh people this is suppose to be a friendly group .. Brine by definition is salty water; anything else added is at the chef's discretion.
P.S. Mustard is yummy!

Milk, a couple of dashes of soy sauce, a dash of tiger sauce, garlic and for you diabetic add a pinch of cinnamon. soak over night or for a few hours.
Then do what you want with it in your chicken.
Love the cook no hateing.

Lime juice
Garlic
Celantro
Salt
Cummin
Oil
Chicken is tender and not overpowered by the marinade
Another one is a low sugar Italian dressing
