I use it once in a while with others in my rice, it's an acquired taste.

Sumac is used in a lot of middle eastern dishes. It's great on a salad called Fatoush.

I'd love to travel to every country in the world, picking out all of their various local spices, and bringing them home to try them in different dishes. This, of course, would get very expensive in India and Central and South America, which is where the majority of the spices we use in the US comes from.

I am learning to cook with basil. I am hoping to get into rosemary, sage, and tarragon.

Basil is pretty easy, it goes with pretty much anything. But have you ever noticed how different herbs taste between fresh and dried? I sometimes have trouble knowing which to use.

File is actually dried sassafras leaves. Some people prefer to use it in gumbo instead of okra. i like both...
Sumac or Sumaq is made from the ground dried berries of the sumac plant. It has a very tart flavor.

I have had exactly the opposite experiance. I grow an herb garden and grow garlic, sweet Basil, oregano, time, parsely, dill, and chives. All of which are much stronger then the dried herbs I purchase in the winter.
