Stuffed Cabbage Rolls,
8 large cabbage leaves (cooked and drained)
1 (10 ounce) can tomato soup
1 lb ground beef
1 cup cooked rice
1/2 cup shredded carrot
1/2 teaspoon oregano
1 egg
1 teaspoon seasoning salt
1/4 teaspoon black pepper
Mix 2 tablespoons of soup with rest of ingredients.
Divide mixture among cabbage leaves.
Fold in sides.
Roll up and secure with toothpicks.
In skillet, place rolls seam side down.
Add remaining soup.
Cover; simmer on low 40 minutes.
8
Every 10 minutes, spoon sauce over rolls.

You can add things like canned chicken, canned roast beef, beans and veggies to rice or noodles. Potatoes are also cheap. All kinds of ways to prepare them.

I just boiled up a 99 cent bag of noodles with chicken bullion and that's what is on the menu most of the week, chicken noodle soup with no chicken.
Hard times are here and will probably stay, can't wait for deer season.

Lately I eat a lot of spaghetti.
I cook up a hand full then add prepared sauce. It only takes a few minutes and it's filling without the fat. On good days if I have chili I will add a spoon of it also.

I make lots of different versions of Stratas-- which are basically a savory bread pudding. They always use: eggs, milk, some sort of bread and a bit of cheese... all of which are budget friendly. You can vary what type of bread you use: sandwich bread, leftover biscuits, corn bread, a french baguette... (one time I was out of bread and made some quick Italian Garlic/Parmesan drop Bisquick biscuits to use) Once you know the ratio of: bread- to milk- to eggs... the variations are up to your imagination.
BASIC STRATA
***************
Preheat oven to 350 degrees-- grease a 9"x13" pan
Slice a baguette into 1/2" slices and let dry on a cookie sheet for a couple hours-- turning once-- or use about 8 slices of sandwich bread-- 6-7 biscuits... Once dry enough-- break into smaller pieces.
In a BIG bowl-- whisk together 6 eggs or the equivalent in egg substitute (I like half eggs/half egg substitute) and 2 Cups of milk. Season generously with salt and pepper-- and any other seasonings/herbs you wish.
Next add in: 1/2 Cup meat (for ex.-- diced ham, crumbled sausage or bacon, diced chicken)-- 1/2- 1 Cup mixed veggies: (for ex.-- diced onion, red & green peppers,
mushrooms, chopped spinach, salsa, corn, beans)-- 1/2 Cup shredded cheese (any of
these-- pepper jack, four cheese italian, sharp cheddar)-- herbs and seasonings (italian seasoning, taco seasoning...) to taste... Sometimes I lightly saute' my veggies then let cool a bit before adding to the egg mixture.
First add your: meat, veggies, seasonings and cheese to the egg mixture-- then add in
the bread pieces. Pour into your prepared pan and put into the fridge for at least an hour and up to overnight (great for making breakfast for guests) Pop into your preheated oven for 45 minutes-- pull out-- add another 1/2 Cup or so of cheese on top-- bake another 15 minutes or till it looks set up!
Great for Breakfast or Brunch or even Dinner-- pair it up with a salad or some fruit -- fills yer tank and isn't hard on your budget. You can get really creative and halve the recipe too. You can make it and let it sit in the fridge up to 8hrs before baking.

BROCCOLI RICE AU GRATIN
~~~~~~~~~~~~~~~~~~~~~~~
This can be a side dish to go with: grilled chicken or baked ham or meal in a pan the way it is or **You can also add in 1 1/2-- 2 cups of chopped cooked chicken or diced up ham to this recipe**
Pre-heat oven to 350 degrees-- Spray a 13"x9" pan with PAM
1 1 lb bag of frozen, chopped broccoli-- thawed
1/2 stick of butter (melted)
2- 10 oz cans- cream of chicken soup
2 Cups instant rice-- I prefer instant brown rice-- MUCH healthier and fills you up better
2 C HOT water
1 15 oz jar Cheez Whiz
1/2 C (heaping) shredded SHARP cheddar cheese
Drain excess liquid from broccoli-- put into prepared pan. Spoon Cheez Whiz into pan-- pour HOT water over and let heat soften it up. Add the rest of the ingredients-- stirring till thoroughly mixed. Bake for 1hr @ 350

This "fake-out" meal can feed a family of 5 -- it's very "veggie tastic" and fairly cheap to make-- Serve with: jasmine tea-- follow up with fortune cookies and sliced oranges like the Chinese restaurant...
*NOTE* Toasted sesame oil is a wonderful way to get an authentic Asian flavor-- a few drops go a long way-- keep in the fridge so it doesn't go rancid.
CHICKEN OR PORK TERIYAKI STIR FRY
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
Stir-Fry Ingredients:
1 lb boneless/skinless chicken thighs or 1 lb pork tenderloin-- cut into bite size with
kitchen shears
2 red peppers-- cut into chunks
2 green peppers-- cut into chunks
1 lg yellow onion-- cut into chunks
1 can pineapple chunks-- drained (reserve juice)
1 bottle Kikkoman Teriyaki baste & glaze
crushed garlic (from a tube-- buy in produce section)
crushed ginger (from a tube-- buy in produce section)
2 Tbs Coconut oil
Marinade Ingredients:
1/4 Cup reserved pineapple juice
1 Tbs crushed garlic (from a tube-- buy in produce section)
1/2 Tbs crushed ginger (from a tube-- buy in produce section)
1/2 Cup soy sauce
1 Tbs brown sugar
1/4 Cup canola oil
Toasted Sesame Oil-- about 5 good shakes
Make marinade in a bowl-- whisking til blended-- then divide between 2 gallon size
Ziploc bags-- put chicken in one bag of marinade and veggies in another (don't add
pineapple yet!)-- let marinate in fridge for at least an hour or so:
Get a wok or a large skillet VERY hot-- drain the chicken-- pat as dry as you can-- so it will brown up. Drain veggies. Melt 1 Tbs coconut oil in pan-- immediately add: a bit more crushed garlic and crushed ginger and then the chicken-- stir fry-- moving chicken around the pan well-- once chicken is no longer pink-- add another 1 Tbs of coconut oil and then the well drained veggies-- stir fry til onion starts to get translucent. Now add in: pineapple and Kikkoman Teriyaki Baste and Glaze-- I like a few shakes more of toasted sesame oil. Make sure all ingredients are well coated in sauce.
Serve with hot rice-- I usually make about 3-4 cups of rice to go with this amount of stir fry.

1 lb. of lean ground beef, browned and drained.
1 large chopped onion, sauteed along with the ground beef.
1 28 oz can of baked beans-not drained.
1/4 cup of any kind of BBQ sauce.
Mix all together, add 1 cup of shredded cheddar cheese, cover and simmer until the cheese melts. Eat as is along with some tortilla chips, or on rice.

It would help to know if you want healthy or if boxed is ok and how many you're cooking for. I'm single with a one year old. One pot . . . Yellow rice packet mix. . . Size depends on how many youre feeding so read packet. . . Pre cooked chicken from the market of your choice on way home, i use 1/4 chicken picked and not broken too small- cooking will do that- per person. . . And 1/4 cup frozen vegetable your choice per person. . . I like peas and carrots for this. . . And olive oil or butter. Fill pot with recommended amount of water rice packet calls for plus one additional tbsp for each 1/4 c veges desired. Add olive oil. . . I prefer. . . or butter according to package. . . And desired amt of veges. . . And the chicken you have picked. .. Bring to boil and finish according to rice packet instructions. I like this because being single there is left over to chicken to freeze or use for tomorrow night's ramen noodle chicken stir fry.

A large baked potato, with real cheese, fresh or frozen broccoli, crumbled bacon or bacon bits or tiny ham cubes. Add a side garden salad, homemade or from a fast food drive through.
A warm weather alternative, buy a fast food side salad, add your own choice of cheese, bacon, ham, cooked or canned chicken or tuna, nuts, sunflower seeds, olives, onions, whatever you like and have on hand. Round out with a nice crusty roll or crackers.
Hands on time is minimal, budget friendly, healthy.

My favorite simple and inexpensive meal recipe:
Choose your meat:
Chicken, steak, ground beef, or sausage (spicy or sweet)
choose 1:
Virgin olive oil or butter
1st
cook your choice of meat in skillet with either butter or oil, until slight browning.
2nd
Add onion and pepper (your choice of onion and pepper)
3rd
Serve with your choice of rice or your choice of pasta.
Tips:
#1 If choosing ground beef:
Season beef with ground black pepper, garlic, and minced white onions. Serve with flour tortillas for tacos.
#2 If choosing sausage:
Cook 4 and remove 2 before adding peppers and onions. Slice up the 2 removed and place in small pot with your choice of Marinara sauce and serve over pasta or in italian roll. (Add mozzarella for parm)

someone just posted this on facebook. never tried it but it is apparently inexpensive, sounds good and looks interesting.
To make this, you'll need:
2 crescent roll tubes
1 LB ground beef (or ground turkey)
1 packet of taco seasoning
1 1/2 cups grated cheddar cheese
Lay out the two tubes of crescent pastry, thick sides in. Use some of the left over crescent rolls to to make the center a bit thicker.
Brown beef and add taco seasoning.
Lay beef in a circle inside of the laid out crescent rolls
Add cheese to the top
Pull over crescent rolls and tuck in under meat and cheese.
Add cheese, lettuce, tomato, black olives, sour cream or whatever you desire for your tacos, in the middle.
Follow cook time on the pack of crescent rolls, and once it's done, you're good to go. Easy, cheap, and yummy!

Pampered Chef has this recipe but it's called Taco Ring and you make it in a ring shape. I've made it a couple times and it's SUPER good. Cook the onion, olives, some cheese and tomatoes in with the meat once that is cooked and put it all in the crescent roll. Yum! Serve with sour cream or salsa.

Camper's Chicken Pockets
1lb Skinless, Boneless Chicken Breast Halves
1small Onion, 4 slices
OPT- 1/2 large green Pepper (12 strips)
1large white Potato, (24slices)
OPT- 3/4 C BBQ Sauce.
OPT- S &P 2Ts
OPT- Mushrooms
OPT- Tomato Slices
4 (14 in) Squares Aluminum Foil
1) Preheat oven 450° F. Slice Chicken into strips 1/2 in then distribute into foil squares.
2) Peel Onion and slice into 4 (1/4 in thick) slices then separate into rings before adding to chicken.
3) De-stem and de-seed Pepper ere slicing into 12 strips. Lay 3 strips on top of the onions per square.
4) Rinse Potatoes. DO NOT PEEL. Slice 1/16 in wide. 6 per square. Add Opts.
5) Spoon 3T of BBQ Sauce per square.
6) Fold foils across the middle, then roll ends to seal.
7) Bake 20-25 mins til vegs soft and the chicken isn't pink in the middle.
8) Serve ASAP, passing around the extra BBQ Sauce, S&P

Trail Stew
This is an absolutely wonderful recipe. It's more or less throw whatever you want into the pot, so it is a good use for Leftovers. As the name suggests, this was made for life on the trail and has been used "throughout history."
1lb Stew Meat/ Rabbit/ Squirrel/Chicken/Venison/ Pork
1T Oil
1Onion, chopped
4 Large Potatoes
Carrots, chopped
Green Beans
2C +2C Water
1/2C Flour
Large Stew Pot
1. Heat oil in the pot to brown Meat and Onions.
2. Add Vegetables and 2 C Water. Cover to simmer 1 1/2 hours.
3. Mix in the Flour and 2C Water. Stir until thickened.

My fav is goji. It is a bush you can grow. Ask around when you go tot he chinese buffet to see if any of thm can get you some starter pieces. The leaves are eddible and one of the healthiest things youc an eat. Just boil in a little chicken powder water and eat.

One of my favorites is Chicken a la Mexicana. You can google it for pics. Essentially chicken in a tomato salsa.
2 chicken leg quarters, these are pretty cheap
4 garlic cloves, minced
1 half onion, thinly sliced
2 tomatoes, sliced
Whichever type and number of peppers you like, sliced. I use about 4 jalapenos, but you can use a couple of bell peppers instead if you don't want it spicy.
2 cups of water
2 tablespoons of tomato paste
a third teaspoon of cumin
2 bay leaves
Salt to taste
Salt and pepper the leg quarters(I remove the skin for less calories) and in a small pot or medium pan with some oil, brown the chicken on both sides. Remove the chicken and set aside. In the same pot, sautee the onion, garlic, and pepper slices til the onion is almost clear color. Add the tomatos, 2 cups of water or 3 if it's a wider pan, and the tomato paste. I break up the tomato paste up some by swirling a spoon in there. Add the cumin and bay leaves. Add the chicken back into the pan, and bring the water to a boil. Cover the pot and reduce heat to low and let cook for about 45 mins. Add salt to taste at the end. You can eat it over rice, or with bread, or as I do, tear off tortilla pieces and tear off at the chicken as you eat it.

Black Bean barbecue burger [vegetarian dish]
Finely Chop a green or red bell pepper [save the lid and the bottom for burger bun]
Steam the lid and bottom of the pepper for about 1 minute in a microwave oven
Finely chop 1/2 medium onion or 1 small onion
1/2 to 1 cup honey dijon barbecue sauce
Mix together: [makes about 4 burgers]
Get a can of black beans [crushed or if whole grind them in a food chopper]
add 1/2 cup bread crumbs or you can add 1 cup ground tofu [optional]
add finely chopped onion
add finely chopped green or red bell pepper
a dash red [cayenne] pepper
a dash black pepper
1 to 2 tbsp chili powder [or 1/2 packet of 'off the shelf' seasoned chili powder mix]
seasoned salt
scoop 2-3 tbsp balls and mold into burgers 1 inch thick and 2 inches wide
grill them in a broiler for about 15 minutes, add the barbecue sauce on top with a spoon or brush
place the steamed top and bottom bell pepper on either side of the burger and broil for another 5-10 minutes..brush on the remaining barbecue sauce on top lid...

Get Ziplock steamer bags....they cost around $3.00 and some change.....
Put in fresh, rinsed and cut broccoli florets ....steam them for about 5 minutes....
then get 1 or 2 servings velveeta cheese spread and microwave this.....for about 3 minutes...
pour the melted cheese over the broccoli florets....on a plate
it is a delicious dish too......

Stuffed Cabbage Rolls,
8 large cabbage leaves (cooked and drained)
1 (10 ounce) can tomato soup
1 lb ground beef
1 cup cooked rice
1/2 cup shredded carrot
1/2 teaspoon oregano
1 egg
1 teaspoon seasoning salt
1/4 teaspoon black pepper
Mix 2 tablespoons of soup with rest of ingredients.
Divide mixture among cabbage leaves.
Fold in sides.
Roll up and secure with toothpicks.
In skillet, place rolls seam side down.
Add remaining soup.
Cover; simmer on low 40 minutes.
8
Every 10 minutes, spoon sauce over rolls.
Those of us who are Polish call
these Golombki.They sure are delicious.
