I've never used a crockpot, per se. Always used regular 4 qt pot for slow cooked recipes.
Technically, corned beef is a crock pot recipe.

Boy-- I'd be lost without my CROCK-POT! I made a great batch of White Chicken Chili the other day and it's SO good!

Line your crock--

put in 4 frozen chicken breasts--

heat 1/12 Cups of chicken stock to a boil and pour over the chicken (I make stock using good quality chicken soup base (the kind you refrigerate)a few shakes of black pepper, a few shakes of Lawrey's seasoned salt and a few good shakes of Poultry seasoning).

Cover and cook on HIGH for about 4hrs-- low about 8hrs.

Then-- pull the chicken out with tongs and shred with 2 forks.

Strain your broth til it's nice and clear and return to the crock.

Put the chicken back as well.

Next add in:

1 small jar of Randall brand Great Northern beans--
2 packets of McCormick brand White Chicken Chili seasoning (this stuff is awesome and adds tons of flavor!)--
1 Cup of frozen sweet corn or even better cut the kernels off 4 ears of fresh corn--
1/2 of a loaf of light Cream Cheese (cubed up)--
a few good shakes each of Ground Cumin and Chili powder--

Stir it all up-- cover and cook on HIGH for another hour. **If you want it thicker-- add in about 1/2 Cup instant brown rice-- stir and let hang out another 20 minutes to cook the rice thru and soak up excess liquid.

Stir again before serving--

We like to top with some shredded SHARP cheddar and crumbled whole grain tortilla chips!

CROCK POT BEEF STROGANOFF
~~~~~~~~~~~~~~~~~~~~~~~~~

**Line your crock pot** (liners are in the aisle where foil and oven roasting bags are)

Starting out-- Turn your crock on to high or low then--> add the following to your crock:

1 lb beef stew meat (if you have the time it adds more flavor to sear off the meat in a HOT skillet with a bit of olive oil and a bit of salt & pepper)-- 1 pkg fresh sliced mushrooms-- 1 large white or yellow onion, cut into slivers-- 1 pkg onion soup mix-- 1/2 Cup water-- 1 tsp McCormack, Montreal Steak Seasoning-- 1 tsp Worchestershire sauce

Stir to blend-- Put the lid on your crock and NO PEEKING for 4-6hrs on high or 8hrs on low.

After it's done-- add in: 1 can cream of mushroom soup-- 1/2 Cup light sour cream-- 1 Tbs Dijon mustard-- blend it well with the ingredients in the crock pot.

Serve over lightly buttered egg noodles

Flour meat and brown in a hot fry pan first or your meat will be grey and look and taste boiled. Blah stewed food... PHOEY!!

I've made recipes many times-- with beef stew meat in the crock pot without searing the meat off first and haven't really had a problem with the taste/texture of it.

The only real advantage of searing meat off beforehand is adding more depth of flavor. I like really well seasoned food so all my recipes turn out flavorful whether I take that added step or not.

I made this FLORENTINE TORTELLINI in my crock pot the other day-- SO good and easily adaptable to make it meatless




**LINE YOUR CROCK**

Ingredients:

1 (19oz) bag of frozen cheese tortellini
1 small bag of fresh baby spinach (I used about half of a 5 oz package, but more is better!)
2 (14.5 oz) cans of Italian style diced tomatoes, drained
1 block (8 oz) of cream cheese or neufchatel (less fat)
1 lb. of ground sausage or chicken/turkey sausage
4 cups of chicken broth

Brown the sausage and put all ingredients in crockpot,
chunking up the cream cheese.
Cook on low for 4-6 hrs.

**If you choose to leave the sausage out-- add in about 1 tsp of garlic salt and 1 tsp of Italian seasoning to compensate in the flavor**

Serves 4-6

(I swapped out one can of the tomatoes for a small jar of pizza sauce and added 1/2 of a package of fresh sliced mushrooms as well)

Breakfast casserole

16 oz roll of sausage (maple, sage or regular)
1 bag 26 oz frozen hash browns
16 oz bag of cheddar cheese
1 tbsp ground mustard
12 eggs
1 cup milk
salt & pepper

Directions:
Spray crock pot and evenly spread hash browns at the bottom
Crack 12 eggs in a large bowl
Using a whisk beat slowly
Add milk, ground mustard, salt & pepper and whisk together in the eggs
Cook sausage then drain
Spread sausage over the hash browns evenly
Sprinkle in the cheese to cover evenly (can use all or half the bag of cheese)
Pour the egg mixture over everything
With a wooden spoon stir all the ingredients together to make sure everything is
covered with the egg mixture
Turn the crock pot on low for 6-8 hours
