I don't know about "healthy (because of the salt) but they are certainly HEALTHIER than potato chips!! They do taste BETTER WITH GARLIC POWDER!
EVEN KIDS will love these CRISPY. salty "chip" snacks!
Baked Kale Chips
KALE CHIP SNACKS:
Ingredients:
1 bunch of Kale, removed from the ribs and tough center stems and shred into small pieces
2 tablespoons Olive Oil
Coarse Salt (we used Kosher salt)
(Optional) Garlic Powder
Preparation:
Preheat oven to 350 degrees F.
Tear Kale into small pieces about 2? wide (will shrink in oven) and place in a large bowl. Pour olive oil over kale and gently toss until the kale is well coated in olive oil.
In a large baking pan, spread kale out in a single layer and sprinkle on coarse salt and garlic powder (if using).
Bake for 10-12 minutes until kale has darkened and is crispy. Remove from oven and let cool for 5-10 minutes and serve!

What to DO WITH THE KALE STEMS??
EASY- PICKLE EM!!
Pickle. The fridge pickle is such an amazing thing. You can pickle just about anything and kale stems are no exception. Its just a matter of pouring a hot pickling liquid over the stems, leaving it in the fridge for a day and then dicing it and adding it to salads. My general ratio for a pickling liquid is 1 part vinegar to 1 part water or wine, a heaping spoon of honey and whatever random herbs or spices I have sitting around. Having pickled kale stems in your fridge is exactly what you need to be a good home cook - random ingredients that can augment a salad or a piece of fish.
I personally would use half vinegar, half water, pickling spice(optional), spoon of sugar, boil it and pour it very hot over raw kale stems mixed with sliced onions then refrigerate.
