I want to eat more vegetables and less meat but i hate to cook. Anyone know a super easy vegetarian casserole or dish?

I wish I could say I made this up myself, but I stole it!
Roasted Winter Vegetables with Spiced Lentils and Feta
1 leek cut into 3/4 inch pieces
1 red onion, cut into sixths
1 parsnip, peeled and cut into 1/2 inch cubes
1 large carrot, peeled and cut into 1/2 inch slices
1 small butternut squash, peeled and cut into 1/2 inch chunks.
1 red beet peeled and cut into 1/2 cubes
1 celery stalk cut into 3/4 pieces
1/4 head cauliflower cut into florets
2 Tbsp olive oil
7 oz crumbled feta cheese
Flat leaf parsley and thyme, chopped, to serve. If you don't want to deal with fresh herbs, use 1/2 tsp each and mix into vegetables.
For lentils
14 oz can old lentils, drained and rinsed
1 tsp ground cilantro
1 tsp ground cumin
1. Preheat oven to 425 F
2. Put all vegetables in roasting pan, drizzle the oil across and turn until coated. Roast for 20-25 minutes, turning them once about halfway through.
3. With about 5 minutes left for the vegetables in the oven, heat the lentils in a sauce pan. Once hot and ready to serve, stir into cilantro and cumin.
4. Take roasting pan out, pour in lentils and feta and stir, and top with the parsley and thyme. Or...
Alternate way to serve: Divide the vegetables onto plates to serve, and have the lentils, feta and fresh herbs served in their own bowls at the diner table to be added like toppings.

I like calico beans.
Can kidney beans
Can pork n beans
Can canelloni (white) beans
Can butter beans
Jar tomato sauce or spaghetti sauce
One sweet onion chopped
Two stalks celery chopped
One green bell pepper chopped
Seasoning...salt, pepper, chili powder, garlic
Throw all in crockpot 3-4 hours high, 6-8 low, or in stockpot on stove an hour. If you want more soup consistency, add more tomato sauce or add vegetable broth.

This recipe sounded so good that I checked the cupboards and I had everything on hand that is called for.
I have started a stock pot of this soup already on the stove, simmering.
I slightly modified your posted recipe by:
1. Adding, both, tomato sauce and spaghetti sauce.
2. Browning a pound of ground chuck and adding to soup.
I have baked a skillet if cornbread.
And will fry some potatoes with onions as a side.
It is smelling delicious. And the cooks sample (smile) tastes wonderful.
