Corn Bread Burger Pie

1 pound ground beef
1 medium onion, chopped
1 medium green pepper, chopped
1 (10.75 ounce) can condensed tomato soup, undiluted
1/4 cup salsa
2 tablespoons ketchup
1 tablespoon steak sauce (A1)
1 (8.5 ounce) package corn bread/muffin mix (Or your preference of oven baked corn bread mix)

In a 10-in. ovenproof skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in the soup, salsa, ketchup and steak sauce if desired. Prepare corn bread batter according to package directions; let stand for 2 minutes. Spoon over beef mixture. Bake at 400 degrees F for 15 minutes or until lightly browned. Sprinkle with parsley if desired.

ZESTY ITALIAN CASSEROLE

2 lbs ground beef
1/4 c chopped onion
1 pkg. spaghetti sauce mix
1 - 8 oz can tomato sauce
1/2 C sour cream
1 can of crescent rolls
2 Tbs butter
1/3 C Parmesan Cheese
1 1/2 C mozzarella cheese

Brown Ground beef and onions then drain. Stir in spaghetti mix and tomato sauce. Remove from heat and spoon into ungreased 9 x 13 baking dish. Combin mozzarella cheese and sour cream and spoon over meat sauce. Seperate crescent rolls and place over cheese. Melt butter and combine with parmesan cheese. Spread over dough. Bake at 375 for 18-25 minutes or until deep golden brown.

Velveeta Salsa Mac&Cheese

1 lb ground beef
1 16 oz jar thick n chunky salsa
1 7 oz box of macaroni uncooked
3/4 lb Velveeta Cheese cut up
1 3/4 water

Brown beef and drain. Add salsa and water. Bring to a boil. Stir in macaroni, reduce heat to med-low; cover and simmer 8-10 minues or until macaroni is tender. Add Velveeta and stirl until melted. Makes 4-6 servings.

TACO RICE CASSEROLE

1 LB ground beef
1/2 C chopped onion
1/2 chopped green peppers
1 package taco seasoning
1 1/2 C water
8 oz tomato sauce
3 C cooked rice (i have used instant rice)
Vevetta Cheese
Tortilla Chips

Brown beef, onion and peppers then drain. Add taco seasoning and water and cook at least 5 minutes. Add tomato sauce and rice, spread into a baking dish. Top with slices of cheese. Bake on 350 until it bubbles. Before serving topped with crushed tortilla chips



I have also added taco seasoning to this as well. Yummy

Thank you sit and greeneyez ...... eyez those casseroles looks scrumptious ... I will have to try them and maybe put some in the freezer for when family pops in or a family needs some good nourishment.

I have a "quick" Sheppherd's Pie that I throw together when I am really busy and have little time.

1.5# Ground Chuck
.5# Sausage
1 Large Yellow Onion
1 Box Herbed Stove Top Stuffing
2 Cans French Cut Green Beans
6 Medium sized Idaho Potatoes
1 Can Mushroom Soup
1 Can Celery Soup
Shredded Cheddar Cheese
1 Can Canned French Fried Onions

In large skillet brown ground chuck and sausage with diced onion. Drain (rinse cooked meat).

Mix stuffing mix per directions (not cooked blending)

Drain green beans.

Peel, dice, cook potatoes & prepare mashed.

Mix mushroom and celery soup in a bowl with 2 cans of water.

Layer 1: In a large Pyrex-type casserole pan, line the bottom of the pan with stuffing.

Layer 2: Spread meat & onion mixture.

Layer 3: Spread green beans over other ingredients.

Layer 4: Pour soup & water mixture over all other ingredients.

Layer 5: Spread mashed potatoes over all ingredients.

Layer 6: Sprinkle cheese on top of potatoes.

Layer 7: Cover top with French fried dried onions.

Bake at 350 degrees for 45 minutes, until bubbly. Serves 12. (freezes well for later use)

Serve with a cucumber-onion salad, dinner roll.

[I have substituted pre-cooked chicken, turkey, venison, beef cubes and pork cubes in place of the ground chuck.]

LOL ~~~ My casseroles are a lot like yours, Phina.

If I have the ingredients in the house -- I just chuck everything together in the same baking dish and stir it up before baking.

@ Sit ---- I don't murder my lasagna.



Recently I tossed some long grain brown rice, some turkey and chicken leftovers, some diced celery, and some chopped onion over a mixed up batch of herb flavored Stove Top dressing mix spread in the bottom of a baking casserole dish ... covered the mixture with a can of mushroom soup mixed with a cup of water .. and baked til the rice was fluffed and tender ..... served with a green salad ... it made a very tasty meal.

Here is a really easy and tasty casserole.

Cabbage and Noodles

In a large skillet, cook 1/4lb(or how much ya want) diced bacon until crispy. Remove with a slotted spoon and add 2 Tbsp Butter, 10 cups quartered, sliced Cabbage, a few cloves of Garlic sliced thin, 1 large diced Onion to pan, cook 7 minutes. Stir in Bacon, 1Tbsp Caraway Seed(or not if you dont like caraway), 1 1/2tsp Salt, Cracked Pepperand 12oz. Cooked Egg Noodles.

I also at times add Kilbasa or some other type of meat to it as well. No meat also tastes very Yummy!!!!

CHICKEN DIVAN
~~~~~~~~~~~~~

Pre-heat oven to 350 degrees. Spray a 13"x9" pan with PAM.

INGREDIENTS:

1 large bag frozen chopped broccoli-- thawed
3-4 Cups chopped or shredded cooked chicken (rotisserie chicken is great for this!)
1 can cream of chicken soup
1/2 Cup real mayonnaise
1 Tbs lemon juice
1 heaping tsp curry powder (curry powder is a blend of spices including: coriander, turmeric, cumin, fenugreek, and red pepper-- I get either Spice Islands or McCormick)
1 1/2 Cups shredded SHARP cheddar cheese
4 slices of bread-- torn into little pieces and let to dry a bit (you want soft bread crumbs)
3 Tbs melted butter

DIRECTIONS:

Place the broccoli on the bottom of the pan-- spread evenly. Top the broccoli with the chicken-- again-- spread evenly. In a bowl, combine: chicken soup, mayonnaise, lemon juice and curry powder. Spread this mixture over top of the broccoli and chicken. Top with the shredded cheese. Put the melted butter into a gallon size, ziploc bag-- add in the soft bread crumbs you made-- seal and shake it all up. Sprinkle buttered bread crumbs over the cheese layer. Bake for 30-40 minutes til all heated thru and bubbly. This is a favorite casserole of my family-- the curry adds an interesting taste. I have made this casserole and frozen it before and baked after thawing. It's very pretty too with the different layers
