My favorite chicken coating.. it is so low cal.. and for those that really like the crispy skin on the chicken..


( I don't really measure).. so I am going to give you what I do..

2 TB of a coarse ground mustard. (the kind that looks like all seeds)
2 TB of a Dijon mustard
2 TB of Maple syrup.

Coat chicken with the sauce.. bake at 350 for about 45 min..or more. When the coating has turned into a "CRISPY SKIN".. YUM.. you'll never know you peeled the skin off before cooking.

Grannies Ho-Bo stew
Ground beef, one pound.
Potatoes, two pounds cubed.
Onion, one whole med, diced.
Put in pot &fill with water till 1/4in above ingredients, bring to boil then simmer for about 40 min.Salt&Pepper to taste...
One pot simple, hardy& filling...
To make it a soup just add some stewed tomatoes,peas, carrots, &corn...

My fave low carb dish

1 lb chicken cut up
1 lb bacon crumbled bacon
1 head cauliflower
2 cups cheddar cheese
1 pint heavy cream

Break up cauliflower & drizzle with olive oil, bake on 425 until the crowns start to get a golden color

Fry bacon, drain crumble
Reserve bacon grease to sautée the chicken pieces in. Add both chicken and bacon to the cauliflower. Cover it all with cheese, then pour the cream over all that. Continue baking 35-40 mins.

It's delish. Sometimes I'll add baby Bella's.

Bokchoy Soup

Ingredients
1 large head Bokchoy that has been rinsed and I cut mine with kitchen scissors.
1 bunch broccoli- crowns seperated
1 head cauliflower - crowns separated
1 small bag carrots - sliced
1 bunch of green onions- chopped
Sliced baby Bella's
1 small can water chestnuts
1 small can bamboo shoots
1 cup rice
1 stick of butter
Salt and pepper to taste


Start with Bokchoy first in large soup pot. Cover the Bokchoy with water and bring to slow boil. Add in other veggie ingredients and keep adding water until finally pot is full.

Add butter and seasoning and stir until melted. Then add in rice. Once rice is added stir until rapid boil, then remove from heat and cover. Let it sit about 20 mins before serving.

Serve with garlic bread or you can serve it in bread bowls. Very hearty and all the anti oxidents will cure a cold in less than 24 hours.

Here's one I do quick for entertaining a crowd. Usually on Trivia nights when a bunch of us get together.

Taco salad

Start with a simple black bean chili in a crockpot. (Any recipe will work)
Mine is easy enough. I brown 3 lbs of ground turkey then toss in a crock pot with 2 pkgs of Old El Paso Taco seasoning, sliced onion, 2 cans of diced tomatoes, 4 cans of black beans drained, a little chili powder and some garlic salt. Then I add the juice from a jar of banana peppers and enough water to finish covering it all. Then let it just simmer away on lowest heat.

Sliced Lettuce, tomatoes, black olives, bell peppers of all color, red onions, banana peppers, avocados
Grated cheddar
A medium to hot salsa
Sour cream
Tortilla chips. ( I like to get various pkgs and mix em up for a festive flair).

The simple part I like to all this, everybody layers their own to suit them and everybody is happy.

Serves 8-12 people depending on how big a bowl you give them.

* we have called this 'piñata in a bowl' lol

Fluffyd68, I shaped the ground beef into patties. I browned it first to bring out more flavor in the beef. Then in the same pot, I continue to cook it the way you cook it. Browning it brings out more flavor in the beef.

I also tried this recipe with beef cubes instead of ground beef. It tastes good too. I browned the beef cubes first & then in the same pot I add the rest of the ingredients & continue cooking it the same way.

Chicken Gumbo
3 boneless skinless breast
1 lbs ground beef
1 lbs Royal sausage mild
Cut-up bite size pieces
2 cans stewed tomatoes
1 cup diced onion
3/4 Tbsp ground Sage
3 caps liquid Crab boil

Put breast in a pot add water and crab boil cook 15 min.
In a large skillet brown beef and sausage, strain off grease add sage and onions let simmer till onions get translucent (clear).
Drain breast and cube.
Place all the meats in pot and add tomatoes then water till covered let simmer 30 min salt and pepper to taste
Serve over rice. Enjoy!!!

Good Old Chicken and rice
3 chicken breast
3 cups rice
1 can cream of mushroom soup

In a large pot add chicken breast to
8 cups of water and 1Tbsp of salt
Boil for 15 min add rice and simmer for 10 min , remove chicken and cut up, add soup and simmer for 5 min more. Salt & pepper to taste.

Easy Crock Pot Potato Soup

Ingredients:

1 30oz. bag of frozen diced hash browns
1 32 oz box of chicken broth
1 can of cream of chicken soup (10 oz)
1 pkg. cream cheese (8 oz, not fat free)
3 oz bacon bits
1 cup shredded cheddar cheese
salt and pepper to taste

Directions:

Put the potatoes in the crockpot. Add in the chicken broth, cream of chicken soup and half of the bacon bits. Add a pinch of salt and pepper.
Cook on low for 8 hours or until potatoes are tender.
An hour before serving, cut the cream cheese into small cubes. Place the cubes in the crock pot. Mix a few times throughout the hour before serving.
Once the cream cheese is completely mixed in, it's ready to serve.
Top with cheddar cheese and some additional bacon bits.
