This may sound like a stupid question but does deer meat always taste the same? I have had hamburgers, tacos, and steaks. And sometimes it had more of a stronger gamey taste than other times.
I have a friend who hunts and the last time tacos were made, it tasted so similiar to beef. It was so delicious. And the spices were from spices and not packaged taco mix.
I know, crazy question.

Venison's flavor is influenced by the diet of the host. There are lot's of fields of corn, soys,and sugarbeets up in the Thumb as well as plenty of apple orchards for deer to feed on. Their meat is considerably milder and more palatable than deer from the U.P. where there are fewer farms and more woods.

True. It depends on their diet mostly. But soaking it n different things can get out alot of the gamey flavor like burgundy wine or ilk for example.

venison when prepared with a combination of two to three other meat varieties of the ground variety takes on the flavors of the ingredients one uses to prepare the dish, I am a chef and my favorite dishes contain venison along with lamb, beef and pork and the taste varries according to the flavor combinations

yes because of the alcohol etc. The trick is do not over cook it, like beef.. Venison is great rare and will not sicken you etc

Venison depends on many factors. The age of the animal, the trauma in the killing, whether buck or doe and the butchering. If it is an old buck they are stronger tasting. If it a swamp buck dining on pines, the taste is nasty. If the deer is gut shot and suffers, or runs itself to death bleeding, the adrenaline can ruin the meat taste. That is why is is important to not spook a deer and make a heart shot. Not just for the kindness to the animal but also as to not spoil the meat. Shoot an 8 year old big black haired buck in the guts on the run and forget it!!! I always went after the fattest butt doe. If weather worked out right, I would hang it for the winter to age. cut it with a fork then. It is important to make sure to roll the hide hair out and not get it all over the meat. And gut it cleanly. Then debone, cut it into thin strips, saute an onion in butter, add the venison, sear it and fry it as fast as possible to medium rare and eat at once. I dislike roasts and hamburger due to the dryness of venison. You can buy venison at places but be prepared to pay through the nose for whatever animal they get. Best to find someone to shoot for you and pay for his tag.

Venison, which hasn't been bleed and field dressed properly, will have a gamey odor while cooking and taste slightly more 'pungent'. To alleviate most of the gaminess of venison many cuts may be marinated overnight in the refrigerator using a brine solution.

Ive know soaking in milk overnight helps knock down the gamey flavor. The diet of the deer also has a strong influence. The suprise is that how the deer is " processed " has a very big influence. Ive had fresh venison this way with no gamey taste. They all contribute

Best thing you can do to for deer is to brine it for a few days before eating the salt water brine will pull out all the blood and the gamey taste and infuse it with Flavor not to mention tendorize the meat sooooo much I always brine venison for days before I do anything with it

Gamey taste in Venison can be cured by many of the posts, shown. There is an alternative if you don't have time to wait to marinate the meat... take a tablespoon or two of Cocoa, put it in a large plastic Ziploc bag and shake the meat within, then cook using your regular spices and such. Cocoa can also me used in baked beans, it takes a lot of the gas out.

From what I have been told if the hunter keeps putting fresh ice on the deer after it has been dressed and then you soak it in buttermilk it will cut down the gamey flavor. When you get ground venison in my area they always mix it with pork or beef depending in what you tell them because venidin allow will be too dry.
