I cook from scratch.

I may use some grocery store things already packaged but I will make them in to something else with my own additions

I like makeing new things that have my own ..flair to them

I do a lot of 'scratch' cooking, but box food has its place too.

Lately, bread is from scratch (and NO machines either, all by hand)- just can't get a decent loaf of bread that's not filled with chemicals and HFCS instead of flavor and texture. Same with treats, if I want them I have to make them... Much better for the diet that way.

When I do use box foods, it's almost always as part of something else and never resembles the original product much (Kraft Dinner turns into 4 cheese tuna-mac casserole) or Jiffy Corn Muffins become the base for a baked chili in polenta.

I make homemade buttermilk biscuits from scratch or dumplings. I also make butterscotch pie & crust from scratch & cookies. Alot of my desserts are scratch. Just gives them a much better taste.

I cook most of my dinners from scratch. Breakfast is usually fruit, whole wheat bread or high fiber cereal, juice, or sometimes an egg. Lunch tends to be on the run (no fries or soda) or leftovers from the night before.

My parents are staying with me to help out while I recover from a bit of surgery. Suddenly (after 20 years) I'm shocked at the amount of processed food they eat, the amount of food they waste, and their relative inability to cook and/or even make anything without following a detailed recipe. It's just like listening to the teenage lament, "There's lots of food in here but nothing to eat!"

I don't call it cooking unless I'm doing it from scratch. I know it still is cooking in that I'm heating food, but it feels more like just simply preparing something if it's pre-made. I can't cook all the time because of physical limitations, but when I do it is from scratch. I can't use something like jar spaghetti sauce, Hamburger Helper, or Rice-a-Roni even when I can't cook the real things myself. I will do some frozen foods, and eating out is fine, but I usually just find something simple to prepare, like hot dogs, when I can't really cook.

Since I mentioned not using jar spaghetti sauce, I should also say that I insist on starting from tomato puree, nothing added before I buy it. I would use fresh tomatoes and make my own puree, but my physical limitations prevent that.

When it comes to spices, I used to use spice blends, but I even do my own spice blends now and grind them in a giant mortar and pestle, which I can use while sitting down relaxed. So, curry powder has been replaced by a curry spice blend that I customized and which I mix myself (seeds kept whole until use) and the chili powder has been replaced by a variety of spices along with dried red peppers or the powdered or flaked stuff (the kind that's flaked to go on pizza is great.)

I don't make all of my own bread or desserts either, but I do make those as often as I can. Before the arthritis, I used to do it all, and all from scratch.

From scratch to control the additives, especially sodium. But it feels more satisfying too. Course, convenience is necessary sometimes.

From scratch! Home cooking is the only healthy and, really, the only tasty way to go. I use lots of herbs and spices - usually my own blends. From breads, to main dishes, to desserts - scratch! And usually simple as well. I don't follow a recipe most of the time - it's what 'feels' right.... and I cook for one to twenty the same way! Love to experiment in the kitchen....... it can be sooooo much fun.

I try to keep most of my food as close to natural as I can - without overcooking it. Some things, such as meat, do need thorough cooking - but my veggies should be tender-crisp, and fruits and such should be raw or barely cooked! So much tastier that way!

And yes, that is after a day at work - and even from scratch, a meal can be put on the table in under 30 minutes! Truly a wonderful way to go...........

I experiment with alot of Chili Red or Green the heat level has to burn or doesnt taste good. Turkey dinner always have some red or green chili dish on the table. Make bread from scratch. I use alot of beans and flour . Make alot of soups . Always trying to add flavor to different dishes.

I cook from scratch ONLY, and call myself an experimental cook. I don't consider food from the box as food. Read the ingredients list, it's always very long and unreadable.
Ancient Japanese used to say: The less we cook, the longer we live... Think about it... God gave us food to eat... just find it.

I'm trying to figure out how to make my own deli-style lunch meat from scratch. I can make a ham and slice it thin, and I can make a roast and slice it thin, but it never seems to last beyond a day or two, and it's a lot of hassle to make a roast every two days if I'm really craving roast-beef sandwiches. I was disgusted recently when reading the ingredients on lunchmeat at the store. Maybe I can make my own homemade "boil in bag" type things for hot sandwiches and freeze them. (not sure if anyone remembers those boil in bag things. They were before everyone had microwaves.)

wolfy - yeah, I remember the boil in a bag things. You could probably do something like that if you have one of those machines that suck out all the air - I would check the bags to see if they can be boiled first tho - you should be able to find out with a web search. Let me know if it works.........

I pretty much cook all my meals myself; sometimes I'll talk my sister into doing it for me.
I spend a lot of time each day cooking.

Pre-packaged stuff is bad for you 99.99999% of the time, usually more expensive, tastes bland/bad, and often times requires a microwave.
I don't eat anything that comes out of a microwave...

I cook most everything completely from scratch.

Occasionally, I'll use a boxed mac and cheese dinner, but everything else is completely from basics. This weekend I made a home-made pizza starting with flour, water, yeast and so forth--I did settle for canned tomatoes. Getting it to rise in mid-winter was a challenge!

I grew up cooking from scratch and still love too. I trained as an Artisan baker and often bake at the school I work at for fun.
I don't do a lot of cooking anymore since its just me. I sure miss cooking and baking for someone to make them happy. If I bake I usually just take it to the neighbors.

i've always cooked from scratch...polish mother-great cook. branched out learning memphis southern cooking. have plenty of ref cookbooks. like community or church cookbooks cause they have old timey recipes. i do use the occasional box, bottle or can, but it's on the way to something else!!!

Is't that what cooking is all about? But let's not get carried away with the term "scratch".
I don't possess a magic garden. Canned tomatoes and purees are wonderful bases. The stocks have come a very long way, too. Ain't nuttin wrong with frozen veggies, either. They are actually healthier than sitting out in the grocery for weeks on end.
I swear I wish I could slaughter my own meats and poultries and fishes.
A young man here mentioned he would never eat anything from the microwave. Are you kidding me? I steam fresh or frozen veggies in the mic. Healthier and no messy pans.
Although I do make a mean au gratin, I confess to keeping the boxes on hand for a quickie meal.
I will never forget how I was cooking fried chicken, broccoli, and boxed cheesy potatoes for my friend's two children and us. The 6 year old girl groans LOUDLY, " I HAAAATE those kinds of potatoes!" I asked her if she ever had them. "No". That little thang had double helpings of everything. She ate more than even her father!
Of course I do doctor those things up with oregano and fresh garlic or something....

And as one woman here stated: Once you grow up with homemade meals from someone who knows how to cook and enjoys cooking, you just don't go back.

I consider myself a "scratch" cook as well, but choose my battles as far as ingredients.

I agree diced tomatoes for simmered dishes, tomato sauce and tomato paste, corn and pre-cooked beans (kidney for salads and so forth) can be canned.

Peas, okra, broccoli are fine frozen.

Other beans are best dried.

Carrots, green beans, mushrooms, peppers and tomatoes used in salads, pizzas, etc must be fresh.

You also mention stocks. I still do make my own Chicken Stock. The others just aren't the same. Plus, it makes the house smell SOOOOOO good!!!

I cannot, for the life of me, not critique any restaurant. If my friend is buying I hold my tongue....
If I'm buying I try to engage my friend to open critique as we eat.
It's rather fun.
So many people eat without really thinking about flavor and texture and cohesiveness.
It's fun to open their eyes/palates.

I have yet to make the perfect meal. Ticks me off. Seems at least one item could've been twisted a bit.

I mess up on bread alot.

There isn't much I don't make frome scrach I make my own noodles and ravioli filling included I make my own sauces jams breads cheez chineise dumplings hamburger grow most of my own vegatables and help my mom can pickles tomatos beats peaches pears we are preaty much all from scrach whenever we can granted once in a while I don't feel like cooking and we will go out or orderin or somthing but its rare

yah i used to roll it out with a rolling pin sooooo much work ughh i have a pasta roler now its a dream it makes making noodles soo much easier i think you can get the hand crank kind for fairly cheap like around 20 or 30 dollars i got lucky and my aunt had one she never used and so she gave it to me and i use it constanly now they have the atachments for makinf linguini to makes all your noodles the same size and shape as aposed to rolling and cuting them manualy with a nife

Take advantage of the pre-packaged spice mixes from the local supermarket. The same goes for frozen vegetables. Purchase them and then add them to your stews, soups, and casseroles. It's sooooooo much FUN! ::

That is the only way to cook. I love trying out new recipes and experimenting with old ones. I cannot stand store bought spaghetti sauce so I make mine from scratch along with my hot salsa.

All scratch. If I go out I like to go someplace where the chef is creative. Then I get new ideas of new ways to create stuff. Baking comes from scratch too but I need recipes to remember which set comes out just right.

Wow, amazing how many really cook from scratch. If my 85 year old mother cooks, it's from a box,can or jar and tastes like cardboard or is burnt. Sometime we have to humor her though.
She says I use too many ingredients, but she's never shy when it comes to eating my food.

I cook from scratch:
here is one of my recipes

Home made farmer cheese.

Need to have:

½ gallon of buttermilk (regular or reduced fat)
1 gallon steel pot, preferably with one long handle.
Cheese cloth 3- 4 layers about 12,5“ x 12,5”
Colander

Rinse pot with cold water. Pour buttermilk into the pot. Cover with the lid.
Place pot on the stove on low heat for 2 hours.. Buttermilk should not boil. Watch, if it starts boiling reduce heat (in a future you will learn the right heat); you will see cheese mass will be on the top of liquid separated. Take off the pot form the burner, and let stand to cool down for about 10 minutes.

Place cheese cloth on the colander, drain the liquid, cheese will be left on the cheese cloth inside the colander. Let stand for about 10 min. to let liquid to drain. Place cheese into bowl.

After cheese preparation wash cheese cloth with mild soap, rinse well, let’s dry and place in a plastic bag for next time use.

From ½ gallon of butter milk you will have about 1 lb of farmer cheese.
Farmer cheese could be eaten as a part of a salad instead of regular cheese, or meat, or just alone with yogurt, or honey, or sour cream, you can also add fruits of your choice.

Farmer Cheese pancakes or casserole recipe.

About 1lb. farmer cheese
2 eggs (or whites)
1 cup of all purpose flour, or ¾ of whole wheat and ½ of all purpose flour
1 tsp. of vanilla extract, if you like.
1/3 cup of sugar, or splenda. (If you like sweeter add more) or less
Pinch of salt.
Canola oil or PAM spray

Combine everything. Mix well. For pancakes preheat fryer pan with small amount of oil over it, reduce heat to medium. Make scones like for crab cakes, fry both sides until they become golden, make sure the heat is not to high, it is easy to burn, but inside they won’t be cooked.

For casserole, pour some canola oil over in the casserole dish, spread well, place the whole mass into casserole dish, form even, preheat oven, and bake 40 min. on 350’. Cut on squares.

It’s could be eaten warm or cold with sour cream, yogurt, marmalade, or fruit salad on the top or on the side.



Farmer Cheese salad recipe

1 tomato or 1 cup of cucumber
1-2 scallions
1-2 tbs. of farmer cheese
1 glove of garlic, or 1 tsp. of fresh dill, or fresh parsley.
Juice of ¼ (or less) of lemon
1-2 tsp. of olive oil
If you would like to add salt and pepper do it to your taste.

we make something like that.
grandmas recipe.. its a fam thing so i cant remember all the details..
always got to call mom when I want fresh cheese..
i cook from scratch.. enchiladas with the works, beans & rice..
pretty good..
when Im in the mood to make it..

My favorite meals to cook from scratch are:

Sausage, biscuits and gravy

or

Meatloaf, mashed potatoes and salad

or

Roast Beef, potatoes, and noodles

or

Lasagna and garlic bread

Lots of extra work, compared to buying a box mix of something, but oooooooooh sooooooooo good!!!

I have always cooked from scratch and now I'm a private/personal chef - went to culinary school. I also only purchase organic products. Cooking from scratch is not complicated and you can even use a microwave because we all are time-pressured in our culture. Keeping chemicals and all the junk and fats that are incorporated into prepared products is making Americans unhealthy and killing us. So spread to word to friends - less TV, more healthy and MUCH tastier food should be on their list of daily activities. It is addictive. Chef Lida
