I cook from scratch about 95%. I use stuff like store bought tomato sauce, catsup, mustard and spices. Also cook with prepackaged frozen or canned vegetables. Don't make my own butter or cheese. Gosh maybe I only cook 50/50 from scratch.

I can cook from scratch. My mom had me help her make home made flour tortillas since I was about 5...and it kinda grew from there.

Same here; I often use canned tomato sauces and pre mixed spices like Curry or Chile powders, ketchup, prepared mayonaise, mustard, etc... I agree; that's probably closer to 50% than 100% "from scratch".

Yeah, about the same for me too... The good canned tomatoes are only an hour or two from picking and have no chemicals or waxy sprays. Same for a lot of the fresh-frozen veggies just look for (and avoid) the added salt & water brands. SOME of the canned veggies are that way also, but watch out for the water/oil/chemical content- I found a lot of them have added sugar (HFCS) too. Most common condiments are more cost-effective than trying to make your own. Same for pasta sauces- season the store brands up to your taste level and add meat or sausage or veggies.

Times is tough and it's difficult to afford to eat fresh and 100% home made foods unless you're growing and raising your own.

Maybe we need a thread on affordable tasty & healthy eating...

I love to cook from scratch and pretty much do, always. But sometimes I find a prepared food that works better in certain recipes than home-made. For example, I add Muir Glen's spaghetti sauce to my own spaghetti sauce recipe.

i have day four (4) here in internet dating ... I like these FORUMS.
Some people, don't know what cooking from scratch ... actually means.

From scratch, in MY family and Extended family, means: we make our OWN bread,
with natural flour, yeast, raw sugar, sea salt... I cook recipes from the people
i met, internationally (South America Peru, India, Chine, Italy, Vietnamese, USA...
and am still learning)

From scratch means we grew our Tomatoes in the garden, and we cook down the tomatoes to make the sauce (some call it gravy). From scratch means that we ground our own spices,
(herbs and spices), BUT I WOULD LIKE TO KNOW what the Definition is

... of cooking from scratch. (?)

Sometimes, some people can say they cooked from scratch, when they bought a box of cake mix.
They spent the time to add the egg, oil and water, and they call it cooking from scratch. For me (to me) this is not from scratch. And when i visited other countries,
they Grew their own WHEAT, shucked the hulls, grounded the seed, made their FLOUR, and
that is really and truly from SCRATCH, before they made their bread.

see what I'm saying?

I want to use balsamic vinegar, honey, onions and applesauce to make a sauce for thick cut pork chops... Any suggestions/ ideas/ opinions? Thanks!

My son has a ton of food allergies. So I usuually do a lot of stuff from scractch. He has allergies to gluten, casien (whey, most dairies) But he can have butter and I make organic whip cream from scratch that he can have. He is also allergic to soy, nuts and peas. My mother decide afer a few years of watching me do all this baking from scratch that she would start a company doing gluten, soy and nut free baking stuff. SO it has made it a little bit easier on me. I just go to her house and get the baking mixes I want and go from there. But I do homemade breads and cookis and pies and pizzas.
I actually have a loaf of bread in the oven right now. It takes about an hour or so between mixing, proofing and baking the bread. But it sure turns out great.

I agree with you on that one for sure. I buy as much organic as I can. I even have a friend who butchers cows for a living and does all the organic feed. Between my mother and I we buy a whole cow every year from him. It tastes so much better then the processed scrap on the stores. And the only thing I use a microwave for is to heat up water when I am to lazy to wait for the pot to come to a boil. I even have a popcorn maker so I din't have to use the microwave for popcorn and buy organic kernels

By far as a event caterer I cook from scratch...there is a true difference in taste as all my clients will tell anyone..I come from a long line of Southern cooks and many family recipes passed though the hands of these fine men and women through the years and now I have them trusted to me and I hope to put some together and post as they are mouth watering and not too hard to complete.

I like to cook from scratch but my current kitchen doesn't allow for much of a line set up.
I have a question...can't start a new thread because my profile is too new. However;
Can you soft boil eggs...chill them and finish them another day? I thought they were fully boiled..I'm a cook that sucks at boiling eggs..for real..and my rice is suspect as well..anyway...

I'm going ahead and bringing the eggs to a slow boil...I'm gonna eat them...I fully expect to have gas and know the food safety manual..any thoughts on fixing that problem?

i go into anaphylactic shock if i eat soy protein. my mom accidentally discovered it when i was an infant and began teaching me to cook at age four. by six i was cooking her breakfast in bed. by 14 i was cooking professionally in kitchens. at 21 i went to culinary school and at 24 i became an executive sous chef in control of six restaurants. my allergies are my biggest weakness but they showed me my greatest strength. The fourteen years head start i had in learning to cook gave me a more sophisticated pallet and a huge advantage over others in my field. scratch cooking has saved my life and it has given me a life. if your kids have allergies teach them to cook at a young age. in todays world its a necessity.

I grew up in a large family where ALL the women were good ole country gals who cooked from scratch out of necessity. I do like to read recipe books but mainly just for technique or new ideas, never for measurements! I can generally replicate anything from sight and taste. My granny always said, "Baby, if you gotta measure it then you ain't really cookin'!" lol- I am truly blessed to have recieved this rich inheritance of a genuine love for and knowledge of cooking. About the only foods that really allude me are french sous and dishes. However, I am currently working for an Indian, as in from the country of India, and am excited to be learning aabout so many new and exciting spices! I think my cooking ability is going to jump to a whole new level. Granny never imagined the dishes I would be preparing but I know she would have loved them! Scratch cooking is really an art that is handed down in apprenticeship fashion from master to novice. Once you understand the art or "feel" of the thing, you can branch out in so many new and exciting directions. I love scratch cooking and am truly blessed to be a practioner of this rapidly disappearing artform.
