We had breakfast for dinner-- Protein pancakes made with Greek yogurt and Bisquick-- homemade blueberry sauce for the pancakes and some bacon I did in the oven

last night I made chicken/wild rice/cream of mushroom soup casserole.
tonight is a salad using the chicken out of the casserole, and rice on the side to finish up the leftovers.

Venison tenderloin roasted over maple and apple wood coals and topped with a port wine sauce. With sides of creamy garlic herb mashed potatoes and Brussels sprouts sautéed with bacon and maple syrup.
Brussels sprouts sautéed with bacon and maple syrup. Sounds so awesome! will have to try this one.

Had a BIG meal last night so today for dinner I made something lighter
I made a Chicken/Bacon/Ranch pasta salad-- using Barilla Plus pasta-- which is much higher in protein and fiber than regular pasta (doesn't spike my insulin as bad)
The salad had: diced up red onion, peas, red and yellow sweet peppers, REAL bacon bits, Ranch dressing, cracked pepper and chicken pieces which I'd poached in some homemade chicken stock 
I also made MY version of Pistachio Fluff salad-- made with crushed pineapple, pistachio instant pudding mix, vanilla Greek yogurt, cottage cheese and Cool Whip-- NOT quite as sweet as most people's recipes and the yogurt + cottage cheese adds a nice serving of protein and calcium. My BF and daughter LOVE this and think it's dessert

I Made a yummy steak dinner MY way tonight-- Strip Steaks and Veggies-- marinated with: Worcestershire sauce, soy sauce, LOTS of crushed garlic, light olive oil and cracked pepper-- grilled the steaks first on my George Foreman grill-- set aside to rest-- grilled the veggies next-- red & green peppers, sweet onion, Portobella mushroom slices. Sliced our steaks and served with the veggies over a bed of homemade Brown Rice Pilaf
For dessert-- I made a pan of brownies-- served with a scoop of Culver's vanilla frozen custard and some chocolate syrup

Leftover Crock Pot Chicken Stew-- carrots, celery, onions, mushrooms, potatoes, green beans, chicken-- in a garlic/herb broth (chicken stock + a packet of Lipton Savory Herb with Garlic)-- with some cream of chicken soup and corn starch added at the end to thicken it up...
LOVE this stuff-- has lots of recipes right on the box...

Mini Frittatas in a muffin tin-- I make all different types-- today it's: chopped kale and chopped baby Bella mushrooms, sauteed in EVOO and a bit of butter with lots of garlic, Italian seasoning, cracked pepper and crumbled bacon-- added to-- 6 eggs + 1/2 Cup milk whisked together-- some grated Parmesan and Italian cheese blend. I make a potato crust first by baking 3 tater tots per muffin cup, then smashing them down-- and then pour the fritatta mix on top-- bake @ 350 for about 20 minutes
To go with-- MONKEY BREAD

My BF's FAVORITE-- Italian Meatloaf (I use: lean beef, bulk Italian sausage, diced onion, an egg, Italian seasoned bread crumbs, some tomato paste & ketchup and season with some Lawrey's seasoned salt and Montreal Steak Seasoning)
I bake til 2/3 of the way done and top with a "kicked up" ketchup-- 2 parts ketchup-- 1 part tomato paste-- Italian seasoning, a dash of olive oil, minced garlic. I heat in a saucepan and then top my meatloaf. I save extra sauce for Grilled Meatloaf Sandwiches
Sometimes-- I'll put 1/2 of the meat in the pan, lay some mozzarella sticks on top and cover with the rest of the meat and bake. SURPRISE! You have a hidden tunnel of gooey cheese!
In the summer-- when it's too HOT to bake-- I make burgers out of it-- serve with a slice of provolone and my kicked up ketchup on a lightly garlic buttered and toasted bun-- DELISH
Gonna serve my meatloaf with some Onion Roasted skin-on Yukon Gold potatoes and salad.
